Asparagus, German-style
In Germany they love white asparagus, but it's difficult to get here and green asparagus is also good with the traditional German green sauce. You can eat this dish on its own or with new potatoes as well.
Ingredients
75g leafy herbs (parsley, chives, sorrel, cress)
100g homemade mayonnaise (or shop-bought if you like)
100g sour cream or crème fraîche
1 shallot, very finely chopped
40g dill pickles, chopped, plus 1 tbsp pickle juice
1 tsp Dijon or German mustard
pinch of caster sugar
finely grated zest of ¼ lemon, plus lemon juice to taste
2 eggs, hard-boiled and chopped
400g asparagus
knob of butter
