BASIN BITES: Straight out of the wood oven
ODESSA, Texas (KMID/KPEJ)—In this week's Basin Bites, we visited Greggor's Pizza, a food truck in Odessa that specializes in wood-oven cooking. Greggor's offers multiple items that are all made in-house and fresh each day, from sauces to dough and even dessert items such as cannolis. When it comes to the pizzas, Greg and his wife Angela specialize in varieties that range from toppings such as brisket, jalapenos, sausage, and the classic pepperoni.
Greggor's Pizza, originally known as The Pizza Stone, first started in the Pecos/Fort Stockton area while owner Greg Cook was working for his corporate job. However, when that moved to Odessa, he moved the business here. His wife Angela would homeschool the kids, but once they got older and began attending public school, she brought her prior food service experience to the table.
'We talked about the whole time opening our own little business for years,' says Angela. 'I've always dreamed about opening my own little place with him and and of course, with his experience with cooking and over the fire and whatnot. I think that's what correlates the wood-fired pizza and the wood-fired things that we do. That's what kind of impressed us about this.'

Landgraf's food truck freedom bill heads to Governor's desk

AUSTIN (KMID/KPEJ)- Legislation by State Representative Brooks Landgraf to eliminate bureaucratic hurdles for food truck owners across Texas has cleared both chambers of the Texas Legislature and is now headed to Governor Greg Abbott's desk to be signed into law. House Bill 2844 creates a single, statewide health permit for food trucks issued by the Texas Department of State Health Services (DSHS). This new system replaces the confusing patchwork of local health permits and duplicative inspections that currently burden mobile food vendors operating in multiple jurisdictions. 'Food truck owners shouldn't have to jump through a different set of hoops every time they cross a city limit,' Landgraf said. 'This bill provides a consistent, statewide framework for health permitting—cutting red tape while keeping food safety standards strong.' HB 2844 ensures that mobile food vendors are held to uniform, high health standards without being subjected to redundant local regulations. At the same time, the bill preserves local control by allowing cities to continue enforcing rules on where, when, and how food trucks operate—such as zoning restrictions, hours of operation, and proximity to events or schools. 'This is a big win for Texas small business owners, especially the hard-working entrepreneurs running food trucks in our communities,' Landgraf said. 'Instead of spending thousands of dollars on repetitive permits and unnecessary fees, food truck owners will be able to reinvest that money into growing their business—upgrading equipment, hiring more staff, and expanding their operations.' Landgraf filed the Food Truck Freedom bill at the request of several food truck operators in Odessa and Monahans. State Senator Lois Kolkhorst (R-Brenham) sponsored the bill in the Senate. The bill received overwhelming bipartisan support in both chambers and is set to take effect on July 1, 2026, following the creation of the statewide permit by the Texas Health and Human Services Commission. 6 months in, Mayor Cal Hendrick says there's still work to do within the city
ODESSA, Texas (KMID/KPEJ)- It's been six months since Cal Hendrick became Mayor. The lifelong Odessan became Mayor on November 5th, 2024, beating the incumbent Javier Joven. Since then he has made some improvements to the City. He added signage to parks, road repairs, and many more. He's said there's a lot more to come. 'We found the funds and will soon begin construction on the Amy Bell Sports Center,' Mayor Hendrick said. 'That was huge for me because quite frankly it was dead in the water when I found it. Number two, we have fixed the parks. That is Woodson Park had no lighting and no signage. The waterpark didn't work. All of those things have been done or are in progress.' His job is not done yet with what he wants to fix in Odessa to make the City better. He said there's work to do before the real work can begin. 'Number one is to get fully staffed. Until we get fully staffed, we cannot be the organization we need to be,' Mayor Hendrick said. 'Number two, we continue to look at roads. There are a lot of roads in Odessa that need a lot of work, and we have Joe Tucker, an engineer out there looking at roads and putting priorities out. We have got to do a better job for our people. We have to make sure we have dependable water. But not only fresh water but also wastewater ' Mayor Hendrick said he is doing everything with one goal in mind, bettering Odessa for all who live here. 'This is my attempt to make Odessa better. I hope and represent to the citizens when I ran that everything, I do is what I believe is in the best interest of the citizens. Best interest in Odessa,' Mayor Hendrick said. 'I may not always be right and if I'm not I will fess up and say I made a bad call here. But at least we are going to look at every issue. What's important and we are going to do what we believe is what is important to Odessa. We are not going to focus on anything is what I call the essentials. Essentials are roads, water, trash, parks, police, fire. These are critical.'
