Pressed Italian Ciabatta Sandwich recipe

Rania Harris is back with another great recipe perfect for a summer party or picnic! She's showing Katie O'Malley how to make pressed Italian ciabatta sandwiches. Pressed Italian Ciabatta Sandwich (Photo Credit: KDKA) Ingredients 3 medium red bell peppers – roasted – blackened skin removed 2 tablespoons Dijon mustard 1 tablespoon balsamic vinegar ¼ cup extra-virgin olive oil 2 tablespoons warm water Sea salt and freshly ground pepper to taste 1 loaf ciabatta (1 pound, about 6 inches wide) ½ cup prepared black-olive paste 4 ounces fresh goat cheese 8 ounces marinated artichoke hearts, drained 6 ounces prosciutto, thinly sliced 4 ounces spicy salami, thinly sliced 2 cups loosely packed mixed fresh herbs, such as basil, cilantro, or parsley Directions: Grill peppers; cool and remove skins, then slice: Heat grill to (or a grill pan over) high, or preheat broiler. Cook peppers (on a rimmed baking sheet, if using broiler), turning frequently so all sides cook evenly, until completely charred, 10 minutes. Remove from heat, transfer peppers to a bowl, and cover with plastic. Set aside until skins loosen and peppers are cool enough to handle, about 15 minutes. Using your hands, rub off charred skin, rinsing your hands frequently under cold running water. Pat peppers dry. Slice peppers in half, remove seeds and stems, and cut flesh into 1-inch-wide strips. Make vinaigrette: In a medium bowl, combine Dijon and vinegar. Gradually whisk in oil, followed by water. Season to taste with salt and pepper; set aside. Slice bread crosswise and remove interior Slice bread horizontally and scoop out soft interior—reserve it for another use. Assemble sandwich: Spread olive paste on bottom crust, then add peppers. Crumble goat cheese on top of peppers. Arrange artichokes over goat cheese. Drizzle half the vinaigrette (about 1/4 cup) on top. Arrange prosciutto and salami over artichokes. Scatter herbs over meats. Drizzle remaining vinaigrette (1/4 cup) over inside of top crust, then place top crust on sandwich. Press sandwich: Wrap sandwich tightly with plastic. Set a weight, such as a brick or large cast-iron skillet, on top at least 1 hour and up to 8 hours. Slice and serve: When ready to serve, remove weights and plastic wrap and slice sandwich horizontally into 6 pieces

Man gets out of traffic chaos by stopping for NJ lottery ticket — and wins big

A New Jersey man turned a potentially heated moment on the road into a blissful one. Traffic came to a halt as the man was running errands in Essex County, Tuesday, June 3, New Jersey Lottery officials said in a June 10 news release. 'There was a car stopped there,' the man told lottery officials As he waited, the man said he honked his car's horn. However, he said the driver 'just sat there' on the South Orange road. The man said he could feel the driver's eyes glaring at him. 'I did not want the drama, so I decided to pull into the (7-Eleven) that was right there,' the man told lottery officials. 'I said to myself 'Let me go get a lottery ticket.'' The player brought three tickets: a 'Pick-3, a Pick-4 and a $30 Colossal Crossword Scratch-Off,' according to lottery officials. While his two draw games scored him $100, his scratch-off ticket came with an even bigger win, lottery officials said. He scratched his ticket but 'couldn't see the words at first.' 'Then I saw I got, three…four and kept going,' he said in the release. 'When I got to seven, I couldn't breathe.' In disbelief over his 'top-prize winning 10 words,' the man used his phone to scan his ticket. 'That is when reality set in,' lottery officials said. He won the game's top prize of $600,000. 'I'm thankful to the person that caused me to stop,' the winner said. 'In chaos, there's a blessing.' While the player has won a few prizes in the past few months, including $5,000, $1,000 and $700, this kind of lottery score is a first, officials said. 'Maybe six months ago, I had a dream that I was going to win in the Colossal Crossword. So I started buying that,' he told lottery officials. 'But, if it hadn't been for that other car, I wouldn't have stopped.' The man told lottery officials he will use his winnings to pay down his debt and help his children. South Orange is about a 10-mile drive northwest from Newark.

Powerball player wins big in California. Where was the lucky ticket sold?

A Powerball player in California won $427,953, just missing the $54 million jackpot, lottery officials say. The ticket matched five winning numbers but not the Powerball in the drawing Monday, June 9, the California Lottery said. The lucky ticket was sold at a 7-Eleven in Alhambra, which is about a 10-mile drive northeast from downtown Los Angeles, lottery officials said. California adjusts lottery prizes based on the number of tickets sold and number of winners. Nobody won the grand prize, which rises to an estimated $65 million, with a cash value of about $29.2 million, for the next drawing Wednesday, June 11, the national Powerball site said. The winning numbers were 30, 33, 40, 43 and 52, with a Powerball of 25. The Power Play multiplier was 4x. More than 240,000 other Powerball tickets sold in the United States also won prizes ranging from $4 to $200,000, the lottery said. The Powerball jackpot was last won May 31, when a California player hit the $204.5 million grand prize. What to know about Powerball To score a jackpot in the Powerball, a player must match all five white balls and the red Powerball. The odds of scoring the jackpot prize are 1 in 292,201,338. Tickets can be bought on the day of the drawing, but sales times and price vary by state. Drawings are broadcast Saturdays, Mondays and Wednesdays at 10:59 p.m. ET and can be streamed online. Powerball is played in 45 states, Washington, D.C., Puerto Rico and the U.S. Virgin Islands.
