Chef reveals why you should never throw away citrus peel

Every Thursday we interview chefs from around the UK, hearing about their cheap food hacks and more. Today we chat to chef Diego Jacquet, patron and chef at Zoilo and the Florencio pizzeria in London.
My pet hate in restaurants is... when kitchen staff don't say "backs" or "behind" when passing by behind you. At the least it can result in having to re-do the dish you have just spent time doing, and at worst it can be very dangerous when operating with sharp knives and hot equipment.
The biggest mistake I see in kitchens is... a lack of communication between front of house and kitchen. It is essential to communicate as much as possible. You absolutely need to be working as one team in order to provide good service for our guests.
My one piece of advice for an aspiring chef is... find a good kitchen, keep your head down, pay attention, focus, always be available, don't take feedback personally, and don't make your choices based on money. That's more than one piece of advice but I think it's all essential!
With meat, such as poultry or pork, brine it before cooking it... to add flavour and make the meat more tender. To do so, put 1kg of water to 100g of salt into a saucepan (you may need to amend these quantities depending on how much meat you're brining, of course), put the meat into the saucepan, and bring to the boil. How big your piece of meat is will determine how long to brine it for - there is a lot of information you can find online to help with your particular piece of meat.
My favourite cookbook is... White Heat by Marco Pierre White. It was the first time I saw a chef that looks like a rock star! For me, he paved the way with an age of new cookbooks and made cooking cool. I also like that it's part autobiography, part cookbook.
My go-to cheap eat at home is... crisp Spanish tortilla...
Ingredients
Three eggs
One onion
One packet of flavoured crisps (something like chorizo or prawn)
Bread for toasting
A glug of olive oil for cooking
Salt and pepper to season
Put a frying pan on medium heat and add oil. Slice the onions and caramelise in the pan until golden brown.
Beat the eggs in a bowl and then add the caramelised onions and your choice of flavoured crisps.
Heat some oil in a non-stick pan.
Add the egg mixture to the pan and leave to cook on a low heat for approximately 7-8 minutes.
When the egg mixture is about two thirds set, slide it on to a plate and immediately flip the plate so the mixture lands back in the pan, cooked side up.
Place the non-stick pan back on the low heat for another few minutes until it is cooked through.
Season and serve on toast!
I've cut costs for my restaurant by... buying things more often, rather than big purchases. This helps with our general cash flow in the business.
My favourite cheap substitute is... ox tongue - it is very versatile and is great cold or even grilled!
My tip for preventing waste is... citrus skin. Don't throw these away, just discard the white part using a sharp knife. Slice the skin thinly and then you can make candied citrus peel, or you can keep it in syrup. These can then be used in desserts or as a pretty decoration for cakes. You can even use them to garnish a fancy cocktail.
I've given free meals... I usually give pizza away to those sleeping rough around our restaurant - it's the least I can do to help.

Bangkok is a city built on high energy. Its chaotic pace pushes its residents to keep up or fall behind. When two of its most talented Italian chefs are trading the concrete jungle for the calm shores of Khao Lak, it creates what they call 'a dialogue between Bangkok's energy and Khao Lak's quietude'. This unique collaboration takes the chefs out of their usual comfort zone and into new creative territory. The stars of this event are three distinct culinary voices. First is Chef Michele Fernando from the pizza powerhouse Massilia, rooted in Neapolitan tradition. His skill centres on perfecting the dough while his approach balances tradition and fresh ideas, always finding a spark of creativity to give each pizza a personal touch. He is joined by Chef Marco Avesani of the fine dining spot, La Bottega Bangkok, whose cooking reflects cucina popolare: the home cooking of everyday people. He aims to recreate the warmth of family meals, the joy of sharing simple dishes and a sense of community. Leading the trio is their host, Chef Vincenzo 'Enzo' Sorrentino of JW Marriott Khao Lak Resort & Spa's Olive restaurant. With Italian and Spanish roots, Enzo infuses a Mediterranean spirit into his cooking. He is the playful innovator, a chef who embraces fusion and fire cooking to turn rustic dishes into modern art, all while using local Thai ingredients from the resort's JW Garden. This collision of styles is what makes the event so appealing. Marco brings the warmth and soul of Italian home cooking, Michele shares his exceptional pizza skills and respect for Naples' culinary roots and Enzo adds his creative flair. As Chef Marco explains 'Cooking at a place like JW Marriott Khao Lak challenges us in exciting ways. It's a beautiful setting, and that naturally raises the standard. That challenge sparks creativity, leading us to dishes we might not have thought of in our kitchens.' The two-night event explores these culinary worlds. On Friday, August 29, the a la carte menu features a family-style Italian dinner, allowing guests to pick and share dishes from all three chefs. On Saturday evening, the event evolves into a lavish affair with live cooking shows. Your senses will hum with anticipation as you arrive at a massive spread of Italian delights. For the chefs, this collaboration celebrates Italian hospitality and enables them to elevate their craft. 'We want our guests to feel welcome, to share approachable dishes and to leave with joyful moments', they say. 'Experiences like this also influence our work: seeing how people react motivates us to keep progressing.'

Manchester City boss Pep Guardiola was spotted attending Oasis' homecoming gig this summer and has revealed what meeting legendary frontman Liam Gallagher was like Pep Guardiola has opened up on his meeting with 'kind' Liam Gallagher after praising Oasis as the 'best rock band of the last 50 years'. The Manchester band have been intrinsically linked with Premier League side Manchester City ever since bursting on to the scene in the 1990s. ‌ Both Gallagher brothers are huge fans of the club, but Guardiola returned the favour this summer during Oasis' much-anticipated reunion tour. ‌ The Spanish tactician attended their Heaton Park concert in Manchester in July and got the chance to meet Liam for the first time. Speaking about his experience, Guardiola said: 'It was really good. The first time I've been in this country so it was nice. Being here in Manchester, the first time. ‌ 'They came here after many, many years. They have been the best rock band in the last 50 years. And I'm happy it's back. 'It's the first time I knew Liam. Noel I've been with many times (at City games) but Liam I never met before and I met him before the concert and he was so kind.' And while Guardiola was delighted to meet Liam, his highlight was the concert itself, having praised Oasis as one of the best music groups of all time. He added: 'I don't know how many countries they sold out but that means how good they have been. When (people) say this team will be one of the best, I always say, 'Ask me after 25 years'. 'Then if people still talk about that team, it was a good team. It's like a book, if after 25 years people read the same book, that is a good book. 'It's like Oasis, no? They come back again and sold out all around the world, it is because they are good. Otherwise, it's not sold out.' ‌ Guardiola attended the Heaton Park concert sporting a classic Man City shirt alongside daughter Maria. The Spaniard also got the chance to meet the Gallagher brothers' children including Liam's sons, Lennon, 25, and Gene, 24, as well as Noel's three children, Anais, 25, Donovan, 17, and Sonny, 14. Noel has recently given his verdict on City's summer business and claims some players need to be sold. Speaking on talkSPORT, he said: 'The numbers? No. If Pep says it's [the squad] too big then it's too big. 'But if you look at the players who weren't even on the bench, Rodri, Foden. It's too many.
