I've never been a fan of following long and complex recipes, with preparation times longer than my lunch break.
I've spent more time digging through the cupboards looking for a random obscure ingredient than actually cooking.
The Frankenstein feasts I normally produced looked nothing like the picture in the book or the one the TV chef gushed over.

So when I was asked to trial Ireland's newest meal prep service called Gousto, I was apprehensive.
A brief burst of enthusiasm - which resulted in me buying an apron - quickly dissipated when I received the kit.
I opened the box, which was brimming with ingredients, and I immediately thought I had (literally) bitten off more than I could chew.
But those fears were unfounded. After unpacking everything, I realised most of the ingredients came pre-portioned in handy packets and sachets.
I received a box containing four meals for two people.
This usually costs €50.99, but it can be as little as €25.50 with the introductory offers, which knock 50% off the first box.
The four meals selected at random by the Gousto gurus were:
Spicy Chorizo & Cherry Tomato Spaghetti
Garlicky Pulled Chicken Wholewheat Tortiglioni -
Hot Honey Crispy Chicken Bun With Smashed Potatoes -
Sweet' N' Smoky BBQ Chicken Fajitas
The recipe cards that I dreaded were straightforward and easy to follow.

My girlfriend Emily received an unwanted promotion to sous chef, and before long, we were cooking up a storm.
The simple steps ensured there were no Gordon Ramsay-style bust-ups.

New president of Wexford Lions Club on the huge honour of serving the local community
Speaking of work, for years she was a driven and effective volunteer for Wexford Lions Club, before taking her chains of office as its new president. Emily says, many of the 'questions I get asked' is about what Wexford Lions Club is all about. 'Wexford Lions Club is in operation since 1979. It's actually a global organisation and it dedicates itself to humanitarian causes, with thematic focus like, vision, hunger, diabetes and environmental issues. 'We'd have a lot of local projects, especially around pressure points for families at Christmas, we have a carers weekend, we have the spectacle recycle and the message in a bottle programme. And we're big on community and leadership development. It's 100pc voluntary and 100pc of the money raised goes directly back into those projects on the ground. Membership is open to all people with a moral compass and who want to be a leader within their community.' The motto of Wexford Lions Club is The Community We Serve. 'I was volunteering with them for about ten years, but I have only been a member about five and a half years… For me, I would have been a benefactor of Wexford Lions Club about 14 years ago. And it was through ophthalmology. 'At the time my daughter needed to go to Moorfields for an eye transplant. The Lions Club helped fundraise for this cause and that's how I became a volunteer. I said, 'I'll never financially be able to give back, but I will give up my time'… These people didn't know me, it was literally just a cause they decided to take up. Everybody needs a helping hand at some time or other.' Now, Emily's daughter is 'absolutely amazing' and living an independent life as a mother. The intervention at the time to save her insight was crucial, and now she is one of the youngest members of Wexford Lions Club. 'I'm used to being behind the scenes, so this new role is a huge honour and its big footsteps to fill. It's a new chapter for me, and it's great that people have put that trust into me.' There are over 30 members of the club in Wexford. Reflecting on the night when she received the chains, she said it was 'really nice'. 'My family were extremely proud, and it was nice to have them there. It does make you feel special when you have a night like that, and it's a night for the Lions members to have a social gathering themselves and take time out.'

Girl tells how she couldn't get on school trip bus ‘because it was full' – moments before it crashed killing classmate
A SCHOOLGIRL has told of the miracle moment she was turned away from a packed school coach before it crashed - leaving one child dead and scores hurt. The pupils on board, from Minehead Middle School, were returning from Exmoor Zoo when tragedy struck on the A396 near Wheddon Cross in Somerset. The off-duty firefighter pulled over and ran down to the crash site as smoke billowed from the wreckage before forcing his way inside to begin rescuing children one by one. His heroics emerged as parents and pupils arrived at the school to lay flowers. Six other schools in the area closed their gates in a sign of respect as the local community reeled from the tragedy. One parent told how his stepdaughter lost her fingers in the crash. Seven pupils were trapped inside the coach after it overturned before being freed by firefighters who raced to the scene amid a major incident. A fleet of 20 ambulances and three air ambulances were also scrambled as fresh details of the rescue operation emerged. A teacher at the school wrote on Facebook: "My amazing students, I couldn't be prouder of you all and how incredibly brave you've been. "You looked after each other in what was a life-changing event, we will get through this together. I feel so lucky to be your teacher." Rachel Gilmour, MP for Tiverton and Minehead, said: "It's a very difficult road, very steep, very windy, and it's just the nature of rural roads in my constituency. "I'm just deeply grateful to our emergency services and just heartbroken for the parents and the school and the wider family." Cindy Fouracre, whose two grandchildren attend Minehead Middle School, told BBC Radio Somerset: "Your heart goes out to all the families, the coach driver, everybody, because you just don't expect things like this to happen, do you? "They go out for a lovely day with the school, they're excited and then this is how it happens at the end of the day." Beacon Education Multi-Academy Trust, which runs Minehead Middle School, said: "Our thoughts and prayers are with the family, friends, and all those affected by this terrible accident.
