Once upon a time, there was just Coca-Cola. If you wanted one without sugar, there was Tab – a saccharine, bitter, low-calorie option in a pink can. Then came Diet Coke, Coca-Cola Zero, not to mention Pepsi and a slew of other competitors (more on those below) – drinks promising ultimate refreshment. The sharp hiss and crack of an opened ring-pull was pure temptation. The recipes for Coca-Cola and Pepsi, however, remain closely guarded secrets. The original kola nut flavouring is no longer used; most agree the taste is based on cinnamon, vanilla, citrus and added caffeine. Blend lime juice, lime zest, cinnamon and sugar, and you will find the flavour remarkably close to those rubbery cola-bottle sweets. Skip to: To judge the high-street offerings, I tasted with nostalgia for the flavours of Coke and Pepsi, which seem to be what supermarket own-label versions are aiming for. Some of the 'posh' versions went in other directions: if you want cinnamon-flavoured fizz, Fentimans hits the spot, while M&S's Spiced Madagascan Vanilla cola is reminiscent of Pimm's – but without the booze. They were poured into separate glasses by someone else, identified only with a letter.
