
He loved ribs more than anyone. This Cajun-flavored recipe is for him on Father's Day
This was one of the recipes I developed for my rib-aficionado dad.
I am a fan of St. Louis-style spareribs, which are simply trimmed spareribs, with nice meatiness and fat marbling. Marinated overnight with a Cajun rub, the spareribs are first baked in the oven, cooked fairly low and fairly slow until they are basically cooked through. Then you baste them with a super flavorful barbecue sauce, and you have the option of finishing them in the oven or moving outdoors and finishing them on the grill.
If you choose the oven, you can give them even a bit more browning or caramelization once they're done by running them under the broiler for a minute or two, watching carefully that they don't burn.
If you prefer to finish them on the grill, you can make them ahead up to the point of grilling, which is nice for a party or if you want to get a head start on dinner. Keep them in the fridge until you are ready to complete the final cooking stage, and bring to room temperature before continuing.
Before the ribs are finished with the first stage of baking (or when you are nearing the dinner hour), preheat a gas grill to low, or prepare a charcoal grill for indirect grilling.
The hardest part of all is waiting for a few minutes after the ribs are done cooking before slicing them.
I suggest serving the ribs with Cajun dirty rice, coleslaw and, if you're going for the whole Southern meal situation, maybe some homemade mac and cheese. A pie for dessert would be the ultimate celebration.
Cajun Pork Spareribs
Serves 8
Ingredients:
2 (3-pound) racks St. Louis-style pork spareribs
Rub:
2 tablespoons paprika
4 teaspoons kosher salt
1 tablespoon dried thyme
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons black pepper
1 teaspoon cayenne pepper
Basting sauce:
3 cloves garlic, minced
3 scallions, trimmed and chopped, white and green parts
1 cup ketchup
1/4 cup molasses
1/4 cup (1/2 stick) unsalted butter
1/2 cup cider vinegar
1/4 cup Dijon mustard
1 tablespoon Tabasco or other hot sauce
1/2 teaspoon coarse or kosher salt
Directions:
Remove the membranes from the bone side of all the racks of ribs, using a sharp knife to peel the membrane off. In a small bowl, mix together the paprika, salt, thyme, garlic powder, onion powder, black pepper and cayenne pepper. Rub the seasoning all over the ribs. Place the ribs in a container or a bowl, loosely covered, and refrigerate for four to 24 hours.
Before you're ready to cook the ribs, make the basting sauce. In a medium saucepan, combine the garlic, scallions, ketchup, molasses, butter, vinegar, mustard or hot sauce and stir over medium heat until the butter is melted. Let simmer for another 15 minutes or so, stirring occasionally. You can make this ahead of time, store in the fridge for up to a week and reheat.
Preheat the oven to 350°F. Line two rimmed baking sheets with aluminum foil. Place the ribs bone side down in the pans and pour 1 cup of water into each pan. Cover the pans with foil and bake until the meat is tender and starts to pull away from the bones, about two hours.
Remove the pans from the oven and drain off any remaining water. Baste the ribs on all sides with the sauce. Bake uncovered for another 1/2 hour in the oven, bone side down, basting occasionally until the glaze is caramelized and sticky.
Or, brush the ribs generously with the sauce and place them on a gas grill preheated to low or charcoal grill prepared for indirect grilling. Continue to baste and grill, turning every five minutes or so for another half an hour, until the meat is very tender and the glaze is shiny. Watch carefully that the sauce doesn't start to burn, adjusting the heat as needed.
Let the rib racks sit for 10 minutes before cutting them into individual ribs and serving.

H.A. Cody, one of New Brunswick's first literary sensations
In 2025, Codys is known as a quiet rural community about 30 kilometres northwest of Sussex in southern New Brunswick. It's named for the Cody family, United Empire Loyalists who opened several businesses in what became for a while a booming community with its own railway station. Most of the family's accomplishments have been lost over time, but one Cody stands out above the rest. Hiram Alfred Cody, known as H.A. Cody, wrote 25 novels, some of the most popular Canadian fiction at the time. Cody was born in Codys in 1872, some 90 years after his ancestors fled the American Revolution for New Brunswick. While he would eventually become a man of letters, his early years at school were unsettled. He did not like school and preferred the great outdoors to more indoor scholarly pursuits. "Cody did not really have an interest in school as a younger person," said James Upham, a popular historian and contributor to CBC's Roadside History. "[He] tried to leave school. His family just kind of railroaded him back into it." Long gone to the Yukon After his formal education, Cody was ordained as an Anglican minister. According to the Anglican Church of Canada archives, his career as a minister would take him through New Brunswick, from small churches in Doaktown and Ludlow, to Fredericton's Christ Church Cathedral and the former St. James Church in Saint John. But it was Cody's posting in 1904 that probably piqued the interest of the adventurous young minister. He was sent to Dawson City to preach in the middle of the Klondike Gold Rush. The departing minister told Cody he would be expected to spread the gospel, not just within city limits but throughout the Yukon territory. "You're going to be canoeing and you're going to be dog sledding and you're going to be snowshoeing," Upham said. "You just kind of imagine Cody sitting there pinching himself, going like, 'Have I died and gone to heaven?" So Cody, along with his pregnant wife, Jess, moved north. "Not totally sure that she was enjoying it quite as much as he was, but he seems to have really enjoyed himself up there," Upham said. While he was in the territory, he hobnobbed with a giant of early Canadian literature, Robert Service, eventually establishing a friendly rivalry. "He and Robert Service were actually pretty good buddies in the Yukon," Upham said. "Cody seems to have had it in mind that he was going to like, civilize this youngster and sort of show him what's what. To the degree that Cody's book of poetry is … called Songs of a Blue Nose as a direct response to [Service's] Songs of a Sourdough." 'God, king and country' Upham said Cody's work was in keeping with the times, featuring many archetypal characters popular in early English Canadian literature. "They're the kind of stories that your grandma would buy if she was a member of the Imperial Order of the Daughters of the Empire and wanted you to grow up in a particular God, king and country kind of a way," Upham said. Examples include the RCMP constable Norman Grey in The Long Patrol d escribed as a man who "fears neither man nor devil." In a similar vein, Cody created Keith Steadman, a "hardy northman and trailsman" in The Frontiersman, who befriends a dog by giving it scraps from his supper of "bacon, a few beans, a taste of sourdough bread, with some black tea for a relish." While Cody did write stories about the Yukon, he also wrote plenty of stories about his home province. "There's one particular book called the The Unknown Wrestler, which takes place in a mythological community called Rookston, which is definitely not Rexton, even though it is obviously Rexton," Upham said. Cody returned to New Brunswick after a coupe of years and lived much of his life in Saint John. He continued to write until the end of his adventurous life in 1948. "Kid grew up on a farm, didn't really want to go to school, liked being in the woods," Upham said.

Outdoors: Creating a Japanese-inspired garden
Article content My English-style flower garden had its moments of glory but was mostly a mishmash of one-off and failure-to-thrive plants. I wanted something simpler, cohesive, peaceful even; I found all that and more in the Japanese-inspired garden I created in my small Centretown Ottawa backyard. Article content Japan's unique gardening tradition, passed from Master to pupil for 1,600 years, is rooted in reverence for the natural world: small ponds or raked gravel suggest the sea, rocks evoke mountains, bamboo speak to resilience, conifers to longevity. Article content Article content Article content After much research, I built two types of Japanese gardens: a spiritual Karensansui or dry garden with carefully placed rocks in a sea of gravel (such as the one at Ottawa's Museum of History), and a very small secular stroll or pond garden. The former is complex, so I will describe the stroll garden. Article content These began around the 8 th century as places for entertaining and aesthetic enjoyment. They usually include a villa, water, paths, bridges, a gate, as well as plants. My stroll garden is much modified from the Japanese ideal; it depends on available plants and the limits of my small space. The garden is only 14-feet long by 12-feet wide, although it is expanded visually by the borrowed landscape or shakkeir of my neighbour's maples and cedars. Article content Article content Japanese stroll gardens are intended to appear natural, as if they grew by themselves, but the components are carefully chosen and arranged. Asymmetry is key; rocks and plants appear in odd-numbered groupings (one, three, five, seven, etc.) often arranged in a triangular shape. Paths and beds are curved; nature has few straight lines. And there are a limited number of elements and plant types with space, or Ma, in between. Article content Article content Hardscaping my garden began with the meandering path, which determined the placement of other elements. I chose simple flag stones, flush to the ground. To stay on the path, you must look down at the stones. When you come to wider stones, strollers may pause and look up to see a specific garden view, like a framed work of art. This is the essence of the stroll garden. Article content A fence or wall provides a backdrop and encloses the garden. Often these are bamboo, but I already had lattice, which allows air to flow through on hot days, so I kept that. Article content I also had a bridge, of sorts. These can be arched or flat, slabs of stone or logs. Mine bridges a downward slope in the garden and is made from floor planks recovered from a demolished workshop. This is in keeping with the Japanese concept of wabi-sabi: succinctly put, embracing imperfect, often aged, natural materials, that illustrate the impermanence of life, a Buddhist tenant.
