Pistachio lovers, get ready to rejoice - because one of Australia's biggest bakery chains is taking the craze nationwide.
Bakers Delight has announced the launch of its new pistachio danish ($3.80), combining buttery, flaky pastry with a smooth custard centre and a generous swirl of cult-favourite Pistachio Papi spread.
The treat will hit stores across the country from August 14.
The move marks a major moment in the pistachio boom that has gripped Australia's dessert scene in recent years.
What was once a niche gelato flavour is now dominating menus in cafes, patisseries and ice cream shops - and now, with Bakers Delight on board, it's going mainstream.
Fans are already planning their first bite.
'Epic! My diet can start next week,' one excited customer said.
Another added, 'I'll be there at opening.'
While a third wrote, 'Finally a place I visit daily - at 7:30am I'm bound to actually get my hands on one before they sell out!'
The brand's decision to partner with Pistachio Papi - a cult Australian spread known for its ultra-rich texture and vibrant green hue - is set to draw even bigger crowds.
Pistachio Papi first shot to fame with exclusive pop-ups that attracted kilometre-long queues, including a collaboration with Sydney bakery Son of a Baker in November 2023.
Jars of the creamy spread vanished - more than 2,000 were bought in just 48 hours - and customers even hired strangers for up to $300 via Airtasker to wait in line for them.
The simple nut spread had become a cult sensation.
With Bakers Delight now rolling out pistachio to more than 500 stores nationwide, the Danish could become the most accessible pistachio dessert in the country - and possibly the most in-demand.
But the pistachio craze didn't start in Australia - it started online.
Enter the Dubai chocolate phenomenon, which has triggered global demand that's overtaxed pistachio supply chains.
Created in 2021 by Fix Dessert Chocolatier in Dubai, the original Dubai chocolate bar - nicknamed Can't Get Knafeh of It - features a luscious pistachio-tahini cream layered with crispy kataifi pastry, all coated in milk chocolate.
After a TikTok video of the bar went viral in late 2023, the internet couldn't get enough.
It has now been viewed over 120 million times, inspiring countless imitators - from croissants to ice creams to triple-pistachio cronuts.
Even supermarket giants like Costco, Trader Joe's, Shake Shack, Dunkin' and Lindt are jumping on the pistachio bandwagon, launching their own versions - even a Dubai chocolate-inspired espresso martini can from a UK retailer.
The Middle Eastern-inspired flavour is undeniably the flavour of 2025.
With the Dubai chocolate trend having popularised pistachio as a status dessert, Bakers Delight's with-the-times Danish feels perfectly positioned.
The creamy custard and flaky pastry echo that famed chocolate bar - without the couture prices.
And for many Australians, having the Pistachio Papi experience available across every suburb is a dream come true.

Victoria could save nearly $500m over 10 years by scrapping greyhound racing, estimates show

The Victorian government could save almost half a billion dollars if it follows Tasmania in phasing out greyhound racing in the state, according to independent analysis. A policy costing by the Parliamentary Budget Office (PBO), to be released on Thursday, estimates the government would save $451.6m between 2025–26 and 2035–36 if it stopped subsidising greyhound racing and closed the industry. The figure is based on an estimated $687.4m drop in government spending on the industry over the decade, offset by a $235.8m loss in revenue, as Victorians would no longer be able to bet on greyhound races held in the state. The analysis said the government 'increased ongoing support' to the entire Victorian racing industry, which includes thoroughbred and harness racing, in 2024. This was through a higher point of consumption tax on wagering revenue, which was increased to 15% from 10%, with half of the revenue going to racing, and a funding deed providing $90m annually. The PBO analysis didn't factor in the 'risk or cost of potential legal claims against the Victorian government' from breaking agreements, such as current racing club or racecourse licences or its wagering contract with Tabcorp. Sign up: AU Breaking News email The report was commissioned by Animal Justice Party MP Georgie Purcell, who said she was 'not surprised' but 'absolutely appalled' to learn how much the Victorian government was subsiding the industry. 'For this government to be spending hundreds of millions of dollars supporting the greyhound racing industry while they fail to fund the operation of new women's crisis shelters, fail to meet their Gonski requirement, fail to adequately fund mental health care and fail to properly support regional Victorians is frankly astounding,' Purcell said. She said according to the Coalition of Protection of Greyhounds, which collects publicly available stewards' reports after meets, 29 dogs have died on racetracks in Victoria this year. 'Meanwhile, Tasmania has made a principled and ethical decision after one dog, their Greyhound of the Year, was killed on July 28,' Purcell said. 'It certainly says a lot about the direction of the Victorian Labor government when even the Liberals are doing better than them on animal protection.' The Tasmanian premier, Jeremy Rockliff, on Sunday announced his Liberal government would end funding for greyhound racing in the state by 2029, effectively winding up the industry. In May, a report by economist Saul Eslake into the Tasmanian greyhound industry found the state government funded the sport 'more generously than any other jurisdiction, to the tune of $12.70 per head of population in 2023-24'. This includes by returning 80% of revenue from its point of consumption tax to racing. Eslake told Guardian Australia greyhound racing 'likes to style itself as an industry' but relies on the 'public purse' in most states. 'Racing likes to call itself an industry, so maybe its claims ought to be tested in the same way as when another industry comes along wanting a handout. It should be subject to the same rigorous scrutiny.' The Victorian racing minister, Anthony Carbines, on Monday said he had no plans to end greyhound racing in the state, describing the Tasmanian government's announcement as a 'desperate' attempt to secure the support of crossbench MPs after failing to win a majority at the recent state election. 'No one's safe in Tasmania. Throw everyone overboard to form a majority,' Carbines said. He said greyhound racing generated $850m a year in economic activity and employed almost 5,000 people in full-time work in Victoria. 'The government here in Victoria backs greyhound racing,' Carbines said. In 2018, the ACT banned greyhound racing. New South Wales proposed a ban in 2016 before then premier Mike Baird backflipped after a backlash. Last year, an inquiry into the industry in the state was called, following allegations of widespread animal abuse.

Qantas cancels flights at double the rate of Virgin, competition watchdog finds

Qantas has cancelled flights at double the rate of Virgin, its main competitor, which had the lowest monthly cancellation rates of any major domestic airline over the past year. Air fares across major Australian airlines have also surged relative to the price of jet fuel in 2025, new analysis from the competition watchdog shows. Virgin Australia cancelled just 1.6% of its flights on average over the year to June, while the Qantas group cancelled 3.2%, or almost one in every 30, of its scheduled flights. Cancellation rates typically average 2.2%, according to an Australian Competition and Consumer Commission report released on Tuesday. Jetstar beat both airlines in the month of June, cancelling just 1.1% of flights. Sign up: AU Breaking News email The Canberra-Sydney flight route has seen above-average cancellations, hitting 12% in June, or nearly 15% for the Qantas group and half that for Virgin-leased Link services. 'The airlines have cited poor weather, including strong winds in Sydney and fog in Canberra,' the ACCC report read. In a statement to Guardian Australia, Qantas said: 'We have had the most on time flights of the major domestic airlines for the past year, but our cancellation rate has been higher than it should be'. 'We have a number of initiatives in place to improve our operational performance.' Cancellations across the industry have declined since 2023, as have late arrivals, which fell to a three-year low of less than 18%. Just 15.2% of Virgin flights were late in May, the lowest proportion for any major airline since monitoring began in 2022, though that picked up to 20.4% in June, just higher than Qantas's 19.6%. While airline performance has improved, prices for customers have risen, the ACCC found. Average air fares were much higher in April 2025 than the same month in 2024, even after adjusting for inflation, as back-to-back public holidays saw demand surge. Airlines also raked in more revenue per passenger in June 2025 than they did in June 2024, despite downward pressure on operating costs from falling jet fuel prices, the ACCC said. At the same time, airlines were flying 172,000 fewer seats across Australia in June than they had been in 2019, even though customer demand has returned to pre-pandemic levels. Customers may have tried to manage rising costs by using airline loyalty points but the ACCC warned the frequent flyer programs may not deliver value and could push consumers to spend more than they otherwise would. 'Consumers need to weigh the potential benefits of frequent flyer points which may lose value, expire, or be difficult to redeem against the upfront cost of the flight,' the ACCC's report read. Frequent flyer programs represented nearly a quarter of both Qantas's and Virgin's underlying earnings in 2023-24, respectively $511m and $115m. Qantas in August devalued points for its frequent flyers. Last year the federal court told Qantas to pay a $100m penalty for selling thousands of tickets for flights it had already decided to cancel. In some cases, air fares were offered for up to 62 days after Qantas had decided to cancel a flight, the airline conceded.
