
Food scientist reveals two things they would never eat (one is vegetarian)
Curious about the validity of these claims, we turned to an authority in the field, Dr Kiran Soni, Head of the Department of Nutrition & Health at Yatharth Hospital, Greater Noida, to find out if they hold up.

Raw sprouts, often praised for their high nutrient content, also pose potential health risks. 'While sprouts are a rich source of vitamins, minerals, and fibre, they grow in warm, humid conditions ideal for bacteria like Salmonella and E. coli to thrive,' notes Dr Soni. This risk is especially concerning for vulnerable groups, including pregnant women, the elderly, and those with weakened immune systems.
Dr Soni suggests using cooked sprouts to neutralise harmful bacteria while retaining much of their nutritional value. 'It's a simple step that ensures safety without compromising health benefits,' she adds. She recommends other nutrient-dense options like leafy greens, seeds, and legumes for those who wish to avoid sprouts altogether.

Ground meat is a staple in many kitchens, serving as the foundation for dishes such as burgers, meatballs, and tacos. However, according to Dr Soni, it comes with significant safety concerns. 'The grinding process increases the surface area of the meat, allowing harmful bacteria such as E. coli and Salmonella to infiltrate more easily,' she explains. If ground meat isn't cooked to the proper temperature, these pathogens can survive and cause serious foodborne illnesses.
Dr Soni advises that ground meat should always be cooked thoroughly, reaching an internal temperature of at least 71°C (160°F). She also underscores the importance of proper handling: 'Store ground meat at the correct temperature, avoid cross-contamination in the kitchen, and consume it promptly to minimise risks.'
While these foods carry risks, Dr Soni emphasises that proper handling and preparation can mitigate most concerns. 'It's not about outright banning foods but about understanding how to consume them safely,' she says. Her advice aligns with broader food safety practices:

Let's be honest, life's hectic these days. Most of us barely stop to breathe, let alone think about our daily routines. But funny enough, it's often the small, steady habits that keep us sane. Ayurveda! The old Indian system of health has a few ideas about how to live better. And no, it's not just about herbs and oils. A lot of it is about timing up your daily life with the body's own natural rhythm. They've got a word for it: Dinacharya . It basically means 'daily routine'. Nothing too wild. Just doing things at the right time. Sounds obvious, but it's easy to forget. Starting with the mornings. There's this window, from like 3 AM to 7:30 AM, that's supposed to be ideal for getting up and going. Apparently the first half is ruled by something called Vata, which makes it easier to wake up with a clear head. Once the sun's up, Kapha kicks in, and that's when things feel heavier. So, getting out of bed earlier kind of gives you a head start. What do you do after waking? Well, scrape your tongue, swish a bit of oil around your mouth (oil pulling, they call it), and drink some copper-vessel water if you have one lying around. Sounds odd, but these old tricks are supposed to help get your digestion moving. A bit of stretching or yoga? That's next. Nothing fancy. Maybe 10–15 minutes tops. You want fuel, not a food coma. Midday is when your digestion's at its strongest. Around 12 to 1 PM. So, that's when to eat your biggest meal. If you're gonna have something rich or protein-heavy, this is the time. Your body can actually handle it now. By late afternoon, around 3 or 4 PM, you'll probably want a light snack. Nothing big. A piece of fruit or two. Just enough to stop you from crashing. Evenings around 5 to 7 PM is the good time to move. Whether that's a jog, the gym, or just a walk, this is when your muscles are ready to go. After that, slow things down. From 7 PM onwards, you should start switching off. Not saying you need to sit in silence, but maybe ditch the emails. Listen to music. Talk to someone. Do some candle gazing (Trataka), if that's your thing. Light dinner too. Vegetarian's best. Don't eat too late, it messes with your sleep and digestion. Now, this part matters: 10 PM to 2 AM is when your body does the heavy lifting, repairing, restoring, regenerating. If you're still awake scrolling Instagram, you're messing with that process. Try to be asleep by 10. Keep the room dark. Skip the screens. Let your brain and body rest properly. In the end, it's not about being perfect. Ayurveda just gives you a bit of a roadmap. Not a rulebook. Even if you follow a few of these suggestions, wake up earlier, eat when your digestion's strong, sleep on time, you'll likely feel better. Minister orders inquiry into Anakapalli DCHS and 21 medical staff for ‘dereliction of duties'
Minister for Health, Medical Education and Family Welfare Satya Kumar Yadav ordered that an inquiry be conducted into the alleged irregularities committed by 22 medical staff at a government hospital in Anakapalli district. According to a press release from the Medical and Health Department on Sunday, a team from Anti-Corruption Bureau (ABC) had conducted surprise inspections at the hospital in February 2020 and submitted the findings to the department last month. Based on the ACB report, the Minister said that a speedy inquiry should be conducted and disciplinary action taken against the 22 medical staff of the hospital, including District Coordinator of Health Services (DCHS), nine doctors and 12 head and staff nurses. The hospital had been operating a canteen without a valid licence and did not have proper documentation of the food being served to patients, the release said. The canteen failed to serve quality food and the nurses did not perform their duties properly, the Minister said quoting the report. The ACB held the DCHS responsible for failing to supervise the workings of the hospital and suggested penalties for the the official and also disciplinary action against the other 21 medical staff for dereliction of duties. Meanwhile, the Minister said that the incident from 2020 reflects the situation of government hospitals under the previous regime. After the TDP-led NDA government came to power, regular meetings are being held to review and monitor attendance of medical staff and to check corruption in government hospitals, the Minister said. It has been made clear to the district-level officers that they would be responsible for proper implementation of health schemes and performance of medical staff, he added.

It helps retain the freshness and bright hue.' Once the water is boiling, he adds the palak in but with a warning. "If you don't keep cold water ready while boiling the spinach, and skip transferring it immediately to cold water afterwards, the colour will turn almost black." And here's one tip most people don't know: "Never cover spinach while cooking it. If you do, the temperature rises more than necessary, and that intense heat can darken the colour. Always cook it uncovered to preserve that beautiful green," says Chef Ranveer.
