A restaurant appeals to teetotalers with the UK's first water menu

The French are known for their love of fine wines. La Popote, a French-style restaurant in northern England, is no exception.
The Michelin Guide-listed eatery in the county of Cheshire offers diners the choice of almost 140 varieties of wine. But now the business is taking a bold step to cater for discerning non-drinkers by offering an entire menu of bottled water.
Diners will have the choice of three different bottles of still water and four sparkling beginning Friday, as well as complimentary tap water.
La Popote is tapping into a global trend toward non-alcoholic drinking. For example, a Gallup poll last year showed that 58% of adult Americans say they drink alcohol, down from 67% in 2022. A growing number of Americans are choosing to stay away from alcohol, whether permanently or temporarily, while many restaurants are offering a bigger range of mocktails, and sober bars and non-alcoholic bottle shops are becoming increasingly popular.
Chef Joseph Rawlins, who founded and runs La Popote with his French partner Gaëlle Radigon, said they had initially been approached about the idea by Doran Binder, who was already supplying the restaurant with their 'house' water under his Crag Spring Water brand. A water sommelier, certified by the Fine Water Academy, Binder first suggested the idea of a water menu to the couple three years ago.
'I laughed it off,' Rawlins told CNN. 'I initially thought it was a ridiculous idea.'
But when Binder invited the couple to a tasting at the 'water bar' he owns in the Peak District, a national park in north-central England, they were sold.
'It was mind-blowing,' Rawlins said of the experience, adding that he now believes that 'water isn't just water.'
At that first tasting, they tried five or six different varieties. 'Then we did a second tasting with exactly the same waters but we paired them with certain foods – like Manchego cheese, Comté cheese, chocolate, Parma ham, olives. Like with a wine, the taste just changed.'
The restaurant is the first in Britain to offer a water menu, according to Binder, and one of only a handful in the world.
Binder curated La Popote's water menu, which features a selection from across Europe, including Britain, France, Spain and Portugal. Prices range from £5 ($6.80) for a large bottle of his Crag brand to £19 ($26) for The Palace of Vidago, a Portuguese sparkling water.
'The measurement of minerals in water is what drives taste and flavor,' Binder told CNN. That measurement is called Total Dissolved Solids, or TDS, he said.
'Distilled water is zero TDS. It's brilliant for cleaning windows, brilliant for electrical appliances, brilliant for your car battery – rubbish for the human being,' he said, noting that sea water is at the other end of the spectrum with 30,000-40,000 TDS.
The restaurant's range goes from 14 TDS in the Lauretana sparkling mineral water from Italy to 3,300 for the Vichy Celastins from France.
The French water initially tastes rather salty, Rawlins said. 'Then you put it with something that's quite salty like a Parma ham and they both naturally balance each other out, so the water is not salty anymore and it's a longer-lasting flavor of the ham in your mouth.'
How the water is served is also important, Rawlins said. 'We recommend it at room temperature with ice and a slice of lemon. Water is like wine – if it's too cold, it kills all the flavor.'
The water menu is giving diners 'another dimension,' he added, noting that 'a lot of people are drinking less now.'
Binder, who has never drunk alcohol, agrees. 'There are more and more people who don't drink alcohol, like me. I'm a massive foodie and when I go to a restaurant they can't wait to throw a wine menu in front of my nose, which will never be of interest to me.
'But put a water menu in front of me and now you've opened up a whole new revenue stream. It's appealing to restaurants and it's appealing to more and more health-conscious people and really it's all about the epicurean experience.'

And today, you're going to hear a great question from a loyal listener. But first, we wanted to start with some health news that affects millions of people out there. Kyra is back with us. Please tee us up. Kyra Dahring 00:00:20 Hey, Sanjay. Okay, so our office was buzzing about these new recommendations on how to control blood pressure. And so I'm curious, what's different than before and what do we need to know now? Dr. Sanjay Gupta 00:00:33 Yeah, so I've been thinking about this a lot. I've gotten a ton of questions about the blood pressure guidelines. So let's start with this, just a little bit of context. First of all, this is the first time the guidelines have been updated since 2017. Really important. And if you look at the United States as a whole, close to half, right around half the people have hypertension. Okay, so, I want you to have this context. These recommendations typically come from a collection of health organizations. Such as the American Heart Association, the American College of Cardiology. These groups meet and occasionally they will release an update if they agree that there's enough new evidence that demands it. So again, this is the first update since 2017 and they thought it was important enough to publish this report. I'm gonna tell you what it says right after the break. Dr. Sanjay Gupta 00:01:29 'So one of the big things about these new blood pressure guidelines that a lot of people paid attention to is that they essentially recommend abstinence from alcohol, okay? So this is a surprise, I think, for a lot people because the conventional wisdom has been a drink a day or two drinks a day if you're a guy is okay. This is much clearer. And to be fair, there's been a lot back and forth on alcohol for a long time. Even going back to the 1800s. But more recently, you see increasing evidence about the association of alcohol with all sorts of things, heart disease, dementia, even. And in addition to that, there seemed to be this real trend toward not drinking in general, a sober curious movement. From 1997 to 2023, about 60% of Americans reported drinking alcohol. It's 54% today. So about half of people in the United States drink alcohol. Go back to the 70s and it was around 70%. So this is a really interesting trend, one that we should pay attention to. And in addition to that, a Gallup poll found that a majority of Americans, 53%, say drinking in moderation or one or two drinks a day is bad for one's health. Okay, so again, I start with the alcohol part of these guidelines because that got a lot of attention. Now, one of the other big changes when it came to blood pressure, treating hypertension earlier. Hypertension, stage one, is 130 to 139. That's the top number. Okay, so if you're below 120 over 80, that's considered normal. As you start to get above that, that's consider high. So especially 130 to 139, the recommendations are lifestyle changes first -- healthy weight, reduce salt, exercise. But then, if no changes, after three to six months of lifestyle changes, consider adding a medication. In the past, the recommendation was that anyone who had a blood pressure above 140 should be prescribed lifestyle changes and medication. Again, now it's 130. So that was a big headline. And in addition to all the lifestyle changes they talk about, they also say, when you get to that period of time when you're incorporating these lifestyle changes then alcohol abstinence could make a big difference. I do want to point out something else as well, something that I pay attention to, and that is, again, the association between high blood pressure and the risk of dementia. We've long suspected this, but there was a study that came out of rural China that I think really made the case that good blood pressure control could be helpful for dementia as well. So blood pressure control below 130 over 80 lowered the risk of dementia by 15 percent. So we think about blood pressure in terms of heart disease, but we really have to think about it in terms brain health as well. And I think that's in part why these guidelines are out, why they have been changed. If you're getting into a blood pressure of 130, top number 130, then it's time to implement some of these changes. My name is Mark. I live in New Jersey. I'm 69 years old. I know you've already pretty much exhausted the topic of sunscreen and how much sun is good for you, both in general and for your eyesight. But your podcast on the subject begged a couple of questions. You said that the ideal situation was a certain number of minutes of morning sunlight. Not every day starts off with beautiful golden rays of morning sunshine. How would your recommendation change in the following weather conditions? 1. cloudy all day. 2. Light rain or light snow all day. 3. cloudy or rain or snow in the morning and then sunlight starting at 1 p.m. 4. windy with clouds in the mornings so the sun is only out about 50% of the time. Sorry to get so granular, but just trying to be realistic in terms of actual weather conditions. Thank you! Dr. Sanjay Gupta 00:06:10 'Wow, Mark, thank you very much. It is just gratifying for me to know that you're listening so closely that you actually have a really smart follow-up question for me. I'm impressed. Let's start with the advice that you referenced. That came from Dr. Raj Maturi. He's an ophthalmologist with 25 years of experience. Dr. Raj Maturi 00:06:30 'Aim for 10 to 15 minutes of direct, unfiltered morning light. No windows, no sunglasses, as soon as practical after waking up. In fact, the best and safest time to do it is in the first 45 minutes after the sun rises. Early in the morning, the sun is coming at a pretty acute angle on the atmosphere. A lot of the bad stuff, the UVB light, the really short wavelength light that's bad for us, jumps off the atmosphere. So we don't get that, our skin doesn't get that, and therefore doesn't get red even if you're outside 10-15 minutes. That's a clear sign that it's still safe. And your sunburn risk is almost zero at that early point in the morning and it allows your vitamin D production to happen. Dr. Sanjay Gupta 00:07:13 So let me establish a couple of things here. And I think this is clear, but first of all, skin cancer is typically caused by exposing the cells in the skin to UV radiation, ultraviolet radiation. Most of those harmful ultraviolets rays are coming down from about 10 a.m. To 4 p.m., that's six hour window. That's typically the hottest part of the day with the most sunshine. Now, that's why Dr. Maturi suggests getting those 10 to 15 minutes of direct sunlight In the morning, before most UV rays are beaming down from the sun. And again, that means taking the time without sunglasses on, and of course, being careful to avoid looking directly at the sun, but let me get to the specifics of your question. And I think it's how to achieve the benefits of that direct sunlight, even when it's a rainy day or the sun doesn't come out until the afternoon. First of all, keep in mind that even if it's cloudy, or even if there's a bit of a drizzle, there is sunlight still reaching the earth, and that means it's reaching your body and your eyes. So even if it's not a particularly bright day, that 10 to 15 minutes could still be beneficial. Now if the sun doesn't come out until 1 p.m., you should not consider this your opportunity to make up for the missed morning of sunlight. Why? It may be the first light of the day, but it's still within that higher period of UV rays. So you gotta exercise normal caution. One thing I want to point out, seasonal affective disorder, SAD, that's the acronym. That's a form of depression caused by a lack of sunlight, and about 10 million people in the United States suffer from it. I lived in the North for a long time in Michigan, and the percentage of people suffering from it was even higher up there. So you know, you got to take that into account. That's why a lot of people I think plan a vacation to somewhere warm and sunny during the winter months. And if you can't travel, you could consider getting a lightbox that's a specialized lamp that can at least approximate some of that early morning light. Now, it is important to remember that time outdoors, taking a walk, just spending time in nature, something that is referred to as forest bathing has been shown to benefit not just mood, but also your immune system. So even if it's cloudy outside, maybe even if its lightly snowing outside, consider putting on a coat, taking a walk. It can be a real boon to your eyes, to your immune system, and to your mood as well. I can almost guarantee you, you're gonna feel better. Sometimes when I'm having a tough day, just putting on my sneakers, getting outside, taking a walk, even for a few minutes, makes a huge difference! And Mark, I think it'll help you a lot as well. Is Ultrahuman's Ring Air Now the Most Accurate Ovulation-Tracking Smart Ring?

Ultrahuman's new Cycle and Ovulation Pro feature for the Ring Air has an unexpected origin story. The algorithm behind it was originally designed for intravaginal fertility monitors, but Ultrahuman has since turned it into a non-invasive, temperature-sensing tool that can track ovulation right from your finger. The wearable health tech company announced on Friday that it acquired viO HealthTech, which created the OvuSense algorithm. Validated in 13 peer-reviewed clinical publications and backed by 15 years of clinical research, the algorithm draws on data from over 260,000 cycles collected with medical-grade sensors. It was previously used in class II intravaginal medical fertility monitors. Now, Ultrahuman has adapted that technology for wellness tracking to create its Cycle and Ovulation Pro PowerPlug for the Ring Air. How accurate is Ultrahuman's Cycle and Ovulation Pro? In a press release, Ultrahuman said Cycle and Ovulation Pro delivers over 90% accuracy in confirming ovulation -- a level the company said makes the Air the "world's most accurate cycle-tracking smart ring." This data comes from equivalence testing that compared OvuSense and Ring Air with a multi-hormone ovulation prediction method that tracks rises in luteinizing hormone and progesterone. Though other cycle trackers may report different ovulation confirmation rates -- for example, the Oura Ring claims 96.4% -- that data isn't directly comparable to OvuSense and Ring Air's testing due to differences in validation protocols, datasets and definitions of detection. Ultrahuman Most platforms that track menstrual cycles rely on a 28-day cycle, but Cycle and Ovulation Pro takes into consideration that 87% of people who menstruate have varying cycles due to conditions such as polycystic ovary syndrome, endometriosis, non-bleeding, thyroid disorders or irregular bleeding. "This collaboration benefits from 15 years of clinically proven women's health expertise and applies it to the world's lightest smart ring," said Mohit Kumar, Ultrahuman CEO, in the press release. How is Pro different from the free Cycle and Ovulation PowerPlug? Is Wine At Risk? What The Latest Gallup Poll On Alcohol Consumption Means For The U.S. Wine Industry

Couple on a Date Enjoying Wine getty Statistics from a recent Gallup poll on alcohol consumption in the U.S. are a cause of concern for the U.S. wine community, but how nervous should they be? Even more important, what actions should the industry take to ensure that consumers can still enjoy wine in moderation, and to help support thousands of small family wines businesses around the nation? In order to find some answers I reached out to Gino Colangelo, President of Colangelo & Partners, one of the largest wine-focused public relations agency in the U.S. 'The wine industry is already dealing with tariffs, a slowing economy, Ozempic, and increased competition from THC, RTD's and other alternatives to wine,' stated Gino, in an online interview. 'So the findings in this recent Gallup report are a cause of major concern.' He identified two findings in the Gallup poll that seemed to be dramatic. 'First, only 54% of American adults report that they drink alcohol. That's the lowest percentage in 90 years! And second, over 50% of respondents believe that alcohol is bad for one's health at any level of consumption.' Gino admitted that he was raised with the understanding that moderate consumption was 'Two drinks a day for men and one for women', according to the USDA. He had also been told that a moderate amount of alcohol was actually positive for one's health. 'This represents a dramatic shift,' stated Gino. 'However, for those of us who follow the media, it's not a shock. There's been an overwhelming anti-wine / alcohol bias in the news the past several years.' He referenced the fact that the Gallup report refers to 'recent research indicating that any level of alcohol consumption may negatively affect health.' 'That bias in research dominates the news, while recent studies that suggest moderate consumption is either neutral or even potentially good for one's health are ignored,' he reported. How Concerned Should the U.S. Wine Industry Be? So is the sky really falling on the wine world (as well as other alcoholic beverages), I asked Gino. 'I don't think so. I take surveys like this Gallup poll with a grain of salt, as polls can change dramatically given the timing and what people may be reading in the news that day,' he said. 'However, I actually think the Gallup poll may do the wine community a favor by getting us to focus on the challenge of reduced wine consumption and band together to address it,' he added. Steps the U.S. Wine Industry Can Take to Remain Relevant Change is a constant in businesses, and therefore it is always critical to be strategic and proactive when it comes to addressing potential threats in the environment. So what steps can the U.S. wine industry (and the global wine industry) take to remain relevant and engaged with consumers during this time? 'So many things,' responded Gino. 'The wine community should band together and proactively and relentlessly communicate consistent messages about why we love wine.' He spoke about all of the positive aspects of wine, such as the fact that it is an agricultural beverage that has been in existence for more than 8,000 years. It is part of culture, art, history, diplomacy, romance and nature. 'Plus wine is good economics for farming communities around the world, and in Italy (where Gino's ancestors are from), wine is food . But most importantly: Wine is social and has a unique ability to bring people together,' Gino stated. 'The wine community should band together and proactively and relentlessly communicate consistent messages about why we love wine.' Gino Colangelo, President of Colangelo & Partners He referenced some positive campaigns and organizations that are helping to promote wine in moderation, including Come Over October , that Gino co-founded with wine writer and educator, Karen MacNeil, and fellow wine PR pro Kimberly Charles. The organization hosts events and provides messaging for wineries to use to create their own 'Come Over' wine and friend events. 'The Come Over October campaign has garnered a lot of support from the wine world and we're reaching wine drinkers — and potential wine drinkers — with positive messages. We just need to get more wine companies and trade organizations on board so we can reach greater numbers of consumers,' he added. Other organizations that are making a positive impact are Wine America with their ' The Magic of Wine' campaign; the Wine Market Council with their 'Wine Is' social media campaign; Sonoma County Vintners' 'Wine is Us' campaign, and Napa Valley Vintner's 'Why Wine Video' campaign. In addition, there are countless state and regional winery associations that promote moderate wine consumption and support their many small family winery members by helping them to better connect with wine consumers. It's not just the larger wine producing states such as California, Washington, Oregon, New York, Virginia, Texas, Ohio, and Missouri that have such associations, but even smaller wine producing states such as Idaho, North Carolina, New Jersey, Florida, and many others. Friends Enjoying Wine and Food getty How Should the U.S. Wine Industry Respond to Anti-Wine Articles Given the large number of anti-alcohol articles that have been published in the past year, it is highly probable that this is impacting consumer sentiment. But just a couple of decades ago, wine (especially red wine) was praised for its positive health benefits, even on 60-Minutes, with their famous ' French Paradox ' show. How has the messaging flipped so completely? 'Unfortunately, the louder voices right now are anti-wine/alcohol and they're winning in the court of public opinion,' stated Gino. 'Yet, for every study showing negative effects of wine (or alcohol generally) at any level of consumption, there's another study that says moderate consumption is either neutral or can actually be positive. This makes me believe that the best response is to create a positive narrative around wine that overwhelms the negativity and anti-wine propaganda.' Toward the end of our interview, Gino added that another solution could be to provide more affordable priced glasses and bottles of wine. 'I live in New York city and am continually amazed at the By-the-Glass costs. Generally it starts at $15 and goes up from there. For a younger person particularly, that's a big investment to make in a wine they may have never even tasted before,' he said. 'I think wine companies and restaurants need to re-think the economics of wine, especially at the entry level. There's a world of excellent wine at $15 — $20/bottle of wine store shelves all over the U.S. Let's celebrate and promote those wines as well as the more aspirational and expensive bottles,' he concluded.
