Ibrahim Tabet has been appointed Executive Chef at Nofa Riyadh, a Radisson Collection Resort

Hospitality Net12-05-2025

Nofa Riyadh, a Radisson Collection Resort, has announced the appointment of Ibrahim Tabet as its new Executive Chef, ushering in a bold new culinary chapter for the luxury destination nestled within the Arabian savannah.
With over 18 years of experience in some of the region's most prestigious kitchens, Tabet's culinary journey has spanned Four Seasons Damascus, The Ritz-Carlton KSA, Art Rotana Bahrain, and JW Marriott Riyadh. His reputation was solidified at The Ritz-Carlton, where he launched the first Saudi Heritage Dessert Tasting Menu, an initiative that not only celebrated local ingredients but also significantly boosted dessert sales. His most recent leadership role with FAS Hospitality marked his evolution into a strategic culinary leader, spearheading the transformation of underperforming outlets, negotiating farm-direct supply chains, and introducing sustainable innovations like zero-waste iftars.
Now at the helm of Nofa Riyadh's culinary operations, Chef Tabet oversees all dining experiences across the resort, from destination restaurants and banqueting to in-villa dining and the resort's homegrown farm. More than just an operational lead, he sees his role as a curator of stories, each dish a narrative shaped by local soil, seasonal rhythms, and global inspiration.
A strong believer in the power of food to bring people together, Tabet leads with empathy and excellence, cultivating multicultural kitchen teams through what he calls "tasting diplomacy," collaborative recipe R&D that bridges backgrounds and sparks innovation. His vision for Nofa is ambitious: to turn the resort into Saudi Arabia's most iconic culinary destination, where ingredients are sourced from its own land, where guests embark on immersive gastronomic journeys from field to plate, and where Saudi traditions are reimagined for international recognition.
Outside the kitchen, Ibrahim is passionate about pursuits that challenge both his creativity and his technical curiosity. A self-taught skateboarder, he rediscovered his childhood love for skating during the pandemic. What started as a way to pass the time has since become his ultimate form of stress relief, bringing him clarity and rhythm along coastal promenades and desert paths. He's also deeply fascinated by the science of meat maturation, spending hours experimenting with flavour development and preservation techniques that reflect his meticulous approach to both cuisine and craft.
Whether plating a showstopping soufflé or carving into a dry-aged ribeye, Ibrahim Tabet brings a signature blend of precision, purpose, and passion, anchoring Nofa Riyadh's kitchens in authenticity, artistry, and the spirit of Saudi terroir.

Radisson Hotel Group builds on sustainability commitment with closed loop approach to amenities recycling

Radisson Hotel Group continues to drive its responsible business agenda with an innovative closed loop recycling approach to hotel bulk liquid amenities in key markets including India, Saudi Arabia, and the United Arab Emirates. This wide-scale initiative is part of the Group's broader commitment to reducing single-use plastic waste, supporting a circular and local economy, and providing sustainable stays to guests. The initiative ensures that used bulk amenity bottles are collected, the remaining liquids extracted and recycled, as well as that the packaging is recycled and repurposed. This circular economy approach contributes not only to a more sustainable supply chain but also significantly reduces plastic pollution. In India for example, the closed loop system was established through a network of eleven recycling partners across the country that take amenities waste from hotels. Materials are then sorted, cleaned, recycled and turned into raw materials. The process is fully documented and recorded in an audit and regular reporting, ensuring traceability of the closed loop approach. Additionally, as part of the Group's commitment to Hotel Sustainability Basics, Radisson Hotel Group is replacing single use bathroom amenities with bulk amenity dispensers, with already 91% of hotels using soap dispensers in public washrooms. The Group aims to achieve the roll-out of reusable soap dispensers throughout its portfolio by the end of 2025. The initiative is expected to eliminate 57 million miniature amenity bottles annually and reduce the related plastic use by nearly 500 tons. Next to that, Radisson Hotel Group has already eliminated single-use plastic from all dry bathroom amenities, replacing them with environmentally responsible alternatives. Dry amenities are packaged with innovative materials designed to reduce plastic use. Stone paper – crafted from calcium carbonate bonded with high-density polyethylene resin – has replaced cellulose-based paper and is combined with soybean oil ink used for printing. FSC Cardboard, sourced from recycling and responsibly managed forests, is used for packaging, while the dry amenities themselves use PSM materials made with starch from plants including corn and potatoes combined with plastic fillers like polypropylene. This step aligns with the Group's ongoing efforts to minimize its environmental footprint while maintaining premium 'Yes I Can' service. We are committed to leading sustainability in the industry and reducing single use plastic waste across our operations, said Inge Huijbrechts, Chief Sustainability and Security Officer, at Radisson Hotel Group. We make it easy for guests to experience sustainable stays, expressed by the verification on Hotel Sustainability Basics or a recognized eco-label certification. After food & beverage, amenities are the biggest portion of a typical hotel's scope 3 emissions. With the closed loop recycling and the dry amenities free of single-use plastic, we work at substantially reducing these scope 3 emissions, en route to our Net Zero 2050 target. The launch of the responsible bathroom amenities is part of Radisson Hotel Group's broader sustainability strategy and responds to guest aspirations: a recent survey reported that 75% of global travelers want more sustainable travel choices and 43% believe travel service providers hold the key to mitigating the environmental impact of travel. More widely, the Group is turning objectives into policies, offering Sustainable Stays through Hotel Sustainability Basics and eco-labels; and encouraging guests to travel more responsibly. Berlin Hotel Market Spotlight YE Mar 2025

OVERVIEW The sample of branded full-service hotels in Berlin recorded a healthy increase in profit during the 12 months ending March 2025. Despite a 9.6% growth in expenses, the GOP per available room (PAR) increased by 4.1%, driven by a 7.9% revenue increase. In Q1 2025, the growth of GOP PAR continued but at a slower pace (+0.3% compared to Q1 2024). The key revenue driver was the Rooms department, with RevPAR increasing by 7.3%, underpinned by a 4.5% growth of occupancy and a 2.6% rise in ADR during YE March 2025. In Q1 2025, RevPAR increased by 4.3%, due to a 5.0% increase in occupancy and despite a 0.7% drop in ADR. Occupancy rates were boosted especially during the winter season, with the most substantial YoY increases in January 2025 (+15.3%), December (+14.8%) and November 2024 (11.9%). The performance growth was supported by the declining supply (-0.1%), as there were several hotel closures during the last 12 months (-1,592 rooms), surpassing the hotel openings (+602 rooms). The primary driver of expense growth was Payroll (+€6.5 PAR), followed by Other Expenses (+€5.1 PAR). Overall, while the nominal GOP PAR increased, the GOP margin declined from 30.7% to 29.6%, due to expenses outpacing revenue growth. As a result, only 15.9% of revenue growth flowed through to the bottom line. There were 4 notable openings and re-openings (602 rooms) in Berlin during YE Mar 2025. Some hotels also underwent brand conversions, such as Radisson Collection (former Radisson Blue) and Roomers Berlin (Previously Autograph Collection). Most of the new hotels opened in the city center and within the Upper Upscale class (73.1% of new supply) The room additions in Berlin were offset by five hotel closures, of which two were repurposed into other types of assets, such as the Sheraton Grand Esplanade's conversion into a mixed-use building or the City Hotel Berlin East being converted into refugee accommodation. The most significant supply decline was recorded in Berlin Centre West (-668 rooms), followed by Berlin Outer Boroughs (-311 rooms net). Due to two hotel openings and two closures, Berlin Centre East recorded only a marginal supply decline (-11 rooms net) There has been a shift between hotel classes, as most additions were Upper Upscale hotels (+440 rooms), while most rooms closed within the Upscale class (+530 rooms) Berlin Hotel Market Spotlight 2025 — Source: Cushman & Wakefield & STR (data are rounded) — Photo by Cushman & Wakefield COST OF SALES Total Cost of Sales (COS) increased by 3.8% (+€0.7 PAR), driven by F&B (+€0.4 PAR) and Rooms (+€0.3 PAR) departments. PAYROLL COSTS Total payroll costs registered a significant growth compared to last year (+12.6%), rising from €51.3 to €57.8 PAR. This growth partly reflects the increased occupancy and 3.8% increase in the minimum wage implemented in January 2024. The largest labor costs increase was in the F&B department (+€3.1 PAR, a 14.1% increase), followed by the Rooms department (+€1.9 PAR, a 11.7% increase). UTILITIES COSTS The Utilities costs decreased by €0.9 PAR, from €8.7 (PAR) in YE Mar 2024 to €7.8 (PAR) in YE Mar 2025 (-10.7%). OTHER EXPENSES Other Expenses recorded a YoY growth of 12.7%, increasing from €39.8 to €44.9 PAR.
