
Factory quotes hold as supply drops and mart prices rising
Mart managers are unanimous in admitting prices paid for store and beef cattle are increasing at mart sales over recent days, with up to €3,510 or €4.68/kg paid for a 750kg Charolais bullock at Carnaross Mart, Co. Meath today (Monday, May 12). There are 500 calves and 300 bullocks on offer in the sale.
In Balla Mart, Co. Mayo, on Saturday, May 10, a 755kg Angus bullock made €3,560 or €4.72/kg and another 575kg Limousin bullock sold for €2,970 or €5.17/kg.
In Gortatlea Mart, Co. Kerry, on Friday, May 9, 14 Angus bullocks with an average weight of 597kg sold for €2,930 or €4.90/kg.
In Dowra Mart, Co. Cavan, on Saturday, May 10, a 1,045kg Limousin dry cow sold for €4,700 or €4.49/kg.
Factory quotes: Heifers and steers
This week, factories are starting negotiations at €7.50/kg in general for steers (bullocks), with some outlets opening offers at the lower rate of €7.40/kg on the grid.
Most factories are only killing cattle four days this week and several procurement staff were unsure if there would even be sufficient cattle available to fill out the kill sheets for these four days.
Heifers are being quoted at €7.55-7.60/kg on the grid in general this week, with some outlets starting the week at the lower rate of €7.50/kg.
Procurement staff are talking down the level of demand for beef and saying they will be reluctant to pay above their price offers for cattle this week.
However, the heated bidding wars taking place between factory agents at marts countrywide suggests otherwise.
Cow price
'U' grade cows are still being quoted at up to €7.30/kg with €7.00-7.10/kg the general run of quotes for 'R' grade cows.
'O' grade cows are being quoted at €6.80/kg in general, with 'P' grade cows being quoted at €6.70/kg this week. Regular cow suppliers are managing to secure more from the trade.

Bulls
Under-24-month bulls are being quoted at €7.60-7.70/kg for 'U' grades with €7.50-7.60/kg being quoted for 'R' grades.
'O' grade bulls are being quoted at €7.40-7.50/kg with 'P' grade bulls being quoted at €7.30-7.40/kg.
Under-16-month bulls are being quoted at €7.40/kg on the grid.

Cork restaurant with two Michelin stars announces replacement after chef-patron steps down
Terre , one of only five restaurants in Ireland with two Michelin stars, has appointed a replacement for executive chef Vincent Crepel following his surprise announcement two weeks ago to depart the fine dining restaurant at the luxury Castlemartyr Resort in east Co Cork . Crepel had served as executive chef since the restaurant's opening in September 2022 and pursued ambitious plans to quickly achieve two Michelin stars. In March 2023, six months after opening, the restaurant achieved its first Michelin star, with the second one awarded in January of last year. Lewis Barker, originally from Leeds in the UK, will join Terre from Singapore. He was the youngest chef in Singapore to earn a Michelin star at 27 at Vianney Massot, six months after its opening. Barker was most recently head chef at the one-Michelin-starred Sommer, which closed in October of last year. Crepel has said he will remain on in his position at Terre until the end of September with Barker expected to take over on October 1st. READ MORE Castlemartyr Resort was bought in 2021 for €20 million by Dr Stanley Quek and Peng Loh whose international hospitality portfolio includes hotels and Michelin-starred restaurants in Australia, Singapore, China, the UK and Ireland. They spent €8 million upgrading the hotel, which included adding a second restaurant in a 17th century manor on the estate, Terre. In his statement last month Crepel said: 'Building Terre has been one of the most beautiful and meaningful journeys of my career. We created more than a restaurant, we shaped a space with soul, purpose, and intention.' Following Sommer restaurant's closure in Singapore it was signalled Barker would remain within its ownership group, Ebb & Flow, led by chief executive Lim Kian Chun. His decision to now move to Co Cork may raise eyebrows in the Singaporean food world as Quek and Loh are big competitors of Lim Kian Chun in the fine dining scene there. Vincent Crepel, chef patron at Terre restaurant Barker describes his cooking as classically rooted in the French technique, modernised through local surroundings and flavours experienced from his time in Asia. His culinary profile is a good fit for Terre which serves contemporary cuisine with Asian flavours. 'I am excited at the challenge of leading Terre into the future and being situated in such a beautiful part of the world,' Barker said in a statement. 'My aim is to continue to preserve the ethos of Terre, and I look forward to building on that foundation alongside the talented team with a cuisine that celebrates Ireland's incredible produce and culinary heritage'.

What are the Landscape Actions and how much will they pay?
Last week Minister for Agriculture, Food and the Marine Martin Heydon confirmed that Landscape Actions (LAs) are now open for applications from Co-operation Project (CP) teams in the Agri-Climate Rural Environment Scheme (ACRES). These actions will support farmers in the CP approach of the scheme to target specific environmental priorities, according to the Department of Agriculture, Food and the Marine. The Landscape Actions are large-scale environmental actions focusing on issues such as threatened species, water quality protection, invasive species management and encroaching scrub management in species-rich grassland. The list of potential Landscape Actions and their specifications is currently in a draft state. It will remain in a draft state until a public consultation process on an appropriate assessment, required under environmental legislation, of the Landscape Actions has been completed. That public consultation has now been launched, the details of which are on the department website. The closing date of this consultation in August 15. In the meantime, the department has published a list of potential LAs, of which there a several dozen. These LAs are outlined in five groups, namely: habitat and wildlife support; invasive species; hydromorphology; scrub removal track installation; and infrastructure. The first three of these groups of LAs require training to be undertaken by participants. As can be see in the table below, this training is itself listed as an action for which payment can be received in those three groups. Payments to cover the cost of taking these training courses is €125 per one three-hour course, up to maximum of three courses. The list of Landscape Actions also includes the payment rate; the action unit (such as a metre, hectare, etc); the maximum payable action units per LA Annual Work Plan (AWP); and the maximum payment per AWP. For AWPs pertaining to registered farm partnerships, the maximum payable units and maximum payment per AWP will be multiplied by the number of holdings involved, up to a maximum of three holdings.
