Loose Women's Ruth Langsford's 'go-to summer cocktail' recipe step-by-step
There's no finer time for a cocktail than summer. And now, Ruth Langsford has unveiled her go-to recipe that's best enjoyed amidst sunny British weather.
While you might envision a Piña Colada or Mojito, the Loose Women star instead took viewers through a tutorial to make her favourite Limoncello Spritz. This involves just a handful of ingredients and takes minutes to make.
"Hello and welcome to Ruth's happy hour," she said in an Instagram video earlier this week. "Now, I know a lot of people's go-to summer drink is an Aperol Spritz. Mine is a Limoncello Spritz.
"So, I'm just going to put one together and show you what I do." First and foremost, Ruth popped a couple of ice cubes in some cocktail glasses before topping these up with some Limoncello - the key staple of this drink.
While the star, 65, didn't exactly measure how much was put in, she stopped when the glass appeared just under half-full. Ruth explained: "I mean, you can do proper measurements - but you know.
"I just go by eye. Good old slug of Limoncello - isn't that a pretty bottle? I love Prosecco anyway on its own, but this is a really fresh lemony [drink]."
Popping open the bottle of Prosecco, Ruth poured some into each glass. She then followed this up with some Schweppes soda water - but only a little.
"Okay, so then we are going in with Prosecco," she continued. "[Then] Schweppes, because I think it's the nicest, fizziest one. If I could actually undo it. Not too much, don't want to dilute everything.
"And then this is a little hack of mine. I put all my lemon slices, I cut them, I put them in the freezer, put them in a little box, and then they are all done. And then they are like a lemon ice cube then. I do a couple of those - presentation is all Ruth.
"Fresh mint - and there you go. Limoncello Spritz. Cheers, everyone." Ruth's summer cocktail was quickly showered with countless comments on Instagram, with many fans eager to try the recipe for themselves.
One person wrote: "I LOVE Limoncello Ruth so deffo be trying this cheers." Meanwhile, another person added: "Definitely going try, all supplies are bought," as someone else said: "That looks delicious."
Ruth's Limoncello Spritz ingredient list
As outlined in Ruth's video tutorial, the star uses:
Limoncello
Schweppes soda water
Ice cubes
Prosecco
Frozen lemon slices
Mint leaves
Captioning the video, Ruth also added: "It's light, refreshing and really easy to make. I don't bother using strict measurements but try and follow the 3-2-1 rule… 3 parts Prosecco, 2 parts Limoncello, 1 part soda water.
"My top tip? Frozen lemon wedges. They keep your drink chilled without watering it down and add a lovely zingy twist!"

Helen Flanagan opens up on mum guilt as she admits to 'not being a team' with Scott Sinclair
The former Coronation Street star shared a candid post about her relationship with each of her three kids who she shares with former Celtic star Scott Sinclair. Helen Flanagan has opened up about her tough 'mum guilt' as she candidly discussed 'not being a team' with her ex Scott Sinclair, who she co-parents her three kids with. The former Corrie star shares children Matilda, nine, Delilah, six and Charlie, four, with the former Celtic star, who she was previously engaged to but split from in July 2022. Helen has always been very open and honest about the struggles she has faced with being a single parent. In an emotional new Instagram post, the 34-year-old reflected on some of her favourite memories with her kids from this year so far as she posted a series of sweet videos and snaps with her little ones. She captioned the heartfelt post: "Looked back at some of my favourite times with the kids this year. Found motherhood hard recently, I've felt overwhelmed and stressed the majority of the time and I want to get back to when I'm present and I'm really in it and I'm really enjoying it. "I always wanted to be a mum. I get mum guilt with Matilda as I feel like I'm always preoccupied with her brother, I can't give her the energy that I want to give her and I feel like she always sees me at my worst. "I also feel like she needs calm which I can never be. Delilah, I feel like I'm getting it right with her and I feel like our bond is tight, so that's something not to beat myself up about. Charlie, I could pull my hair out sometimes, I feel like I've got the male version of me. "Co parenting is hard and not being a team together and not being able to talk about your anxieties and worries for the kids. I suppose you can only do your best and be kind to yourself but I wanted these on my grid for me as they make my soul happy." Join the Daily Record WhatsApp community! After candidly opening up about how she has individual mothering struggles with each child, fans rushed to the comments to offer their support and reassurance. One wrote: "You've got three gorgeous, happy kids there so you're definitely doing something right! Don't be so hard on yourself, being a parent is tough but you've got this. One step at a time." A second commented: "Juggling three kids is a super power I'm sure. U got this strong momma." A third replied, referring to Premenstrual Dysphoric Disorder, which Helen suffers from. PMDD is a severe form of premenstrual syndrome characterised by intense emotional and physical symptoms that significantly disrupt daily life. The fan said: "You're a fab mummy to your little beauties and your kids always look so happy. I have PMDD too and it's awful. Can really make you feel so anxious but honestly, you're doing great." Another mother, who found Helen's post relatable, wrote: "So relatable to read this has made me feel so much better as it's exactly how I feel on my own with my babies , like my eldest doesn't always get the best of me , constantly trying to spilt yourself, your time , your energy, leaving nothing for yourself and still feeling guilty." Helen and Scott were together for 13 years before they split in the summer of 2022. The actress, who has been very open about her mental health in the past, was diagnosed with psychosis last year. Helen suffered an episode on New Year's 2024 during a trip to Bali with the kids after she took a bad reaction to her ADHD medication. Reflecting on that time in her life earlier this year, Helen devastatingly shared how she thought her kids would have been better off without her. Helen has had another rough couple of months after splitting with her ex-boyfriend Robbie Talbot in May. The pair dated for around a year before they called it quits. Meanwhile, Scott has since moved on with his new partner Lauren Davies, who he has been dating since 2024.

'I went on a date with a doctor and realised he told big lie when I turned up'
A woman's date with a doctor ended in disaster as she realised she had been lied to shortly she turned up, and she was quick to share her experience with others A woman who went on a date with a doctor discovered he had told her a huge lie as she arrived. The lie left self-proclaimed "internet bestie" Chrissy stunned as she shared how her evening quickly went from exciting to seriously disappointing. She shared the lie in a post to her Instagram page, leaving others equally shocked. The now viral post from June 24 confirmed there would not be a second date with the doctor, whom she had met on an online dating app. Chrissy, too, felt uncomfortable with the deception on her date, and says she is going to "stick to meeting men organically" after this experience. She shared: "His pics were from a Peru trip 24 years ago. Cool story bro. But ya don't look like that anymore." The pictures may have been a red flag for Chrissy, but the unnamed man's comments after the date left her "stung". Chrissy added: "On the date we realized we have a MUTUAL friend. After our date, He told her I wasn't as PRETTY in person. "I don't look like my pics. That STUNG. Coming from a 54 y.o. lying about his age. "He's clearly fishing for a young one. I hope he meets a baddie & she puts him in his place. I think I'll stick to meeting men organically for now." Captioning the post, she said: "Date with a doctor. We went Dutch. He lied about his age. His pics were from 24 years ago. He answered four calls. There will not be a second date." Going "Dutch" on a date means that each person pays their share, with Chrissy paying for her food and the doctor date paying for his. Chrissy's followers have since commented on the date and almost unanimously sided with her. One user wrote: "Showed this to my med school student boyfriend and he said 'I'm SO interested in what specialty he is… I'm guessing a cardiologist', so if you remember which specialty, interested minds would love to know (and shame!) "Also so sorry this was your experience that's so extremely disrespectful and you deserve so much better." Another comment reads: "You made the connection that you had a mutual friend during the date and he went back and told her something negative about you knowing that she would tell you. He was bitter and intentionally did that to hurt you." A third added: "Sounds like he was trying to preemptively say negative things about you so it didn't look like you rejected him. What a sad little man." Though the doctor received plenty of criticism, one comment did defend him taking the four phone calls during dinner. They wrote: "Can't shame him if he's on call he's on call but if they were personal calls then that's different."

How to throw the ultimate summer BBQ or picnic with kids at home - without breaking the bank
Entertaining guru Matilda Bea - who has more than 500,000 followers across Instagram and TikTok - shares her top 10 tips and reveals how to keep kids happy and parents sane all summer long With the school holidays in full swing and costs soaring, many families are skipping pricey outings and choosing to host garden BBQs and local park picnics instead. And according to entertaining expert Matilda Bea, that doesn't mean sacrificing fun or breaking the bank. According to a new survey, parents spend more than £100 extra per week over the summer holidays. But for those placing their children in clubs or camps, this rises to a staggering £385 per week, according to the Utility Warehouse survey that quizzed 1,000 parents of five to 15-year-old children. But having fun with the kids doesn't have to cost a fortune. Here, Matilda shares her top tips with the Mirror for summer BBQs and picnics that look and feel fabulous without breaking the bank. 1. Set the scene Matilda says lighting and tableware make all the difference. "String up fairy lights, use solar lanterns or pop candles in hurricane jars. The glow as the sun goes down transforms the space." Her favourite budget-friendly finds is the £20 Habitat Large Hurricane with Wooden Legs and the £15 Solar Filament Bulb Lantern to "create an instant good vibe". 2. Get inspired by TikTok BBQ season has gone viral once again on TikTok as Brits hope for another heatwave comeback this summer. "Whether you're taking full reign of the grill or curating the most epic spread of sides, it's all about teamwork, fun, and delicious food," Matilda says. "Sharing plates are a staple for making your BBQ or picnic look more curated - and it requires minimal effort." 3. Bring the indoors out Indoor/outdoor living can be a lifesaver for parents this summer, with bringing toys outside helping to keep the kids entertained while you are hosting. Layer up tablecloths, bring out proper cutlery and colourful dishes. "I hosted a garden party recently with 12 friends - tablecloths laid widthways and clashing napkins made it feel so joyful." Don't be afraid of colour. "Bold tones and mixed glassware add so much life to the table." 4. Pick a theme Not everything has to match, but a visual thread helps. "Lemons and blue for an Amalfi vibe, terracotta and wildflowers for Spanish summer." And for those wanting a money saving trick, Matilda suggests naming it "BYOB - bring your own buns!" 5. Plan for the British weather "Umbrellas, parasols, or even a chic throw-over pergola mean your party won't be a washout," she says. "And honestly, a little drizzle never hurt anyone when the spritzes are flowing and the playlists on point." 6. Create a Signature Station Matilda loves a station setup - drinks bars, condiments corners, even DIY sandwich or taco tables. And for the kids, these can be lifesavers if you set up a station just for them filled with their favourite snacks and drinks. "A drinks cart with elderflower spritzes or mocktails is such a moment. Or go full retro with a cordial and soda bar," she adds. "You can easily adapt this into a DIY ice cream bar, s'mores tray, or even a condiment corner with Sainsbury's Spicy Truffle Aioli - my favourite!" 7. Get ahead on prep 'Do what you can the night before - marinate skewers, chop salads, chill drinks. Then you're free to enjoy the day.' For shortcuts on a budget, Matilda swears by Sainsbury's summer range: 'The Coffee & Mascarpone Tart is a no-brainer for dessert.' 8. Seating is everything Low picnic rugs, poufs and fold-up chairs create a casual but stylish setup. "If you're heading to a local park, plenty of brands now offer beautiful foldable chairs and patterned rugs - they instantly elevate the setup and make it feel more curated." 9. Tableware Tableware doesn't have to cost a fortune and can be as simple as picking up some cheap, colourful tablecloths to throw over your old patio set. "A mix of vintage glasses or bold napkins can really bring the table to life," Matilda says. "Think clashing in the best way." 10. Tie it into summer sports With the Lionesses picking up a big win this weekend, it's the perfect time to plan ahead of more summer sports this season. "From F1 Sundays to the Euros or the Olympics, sport can be a great backdrop to your gathering," Matilda says. "Having it playing in the background gives everyone a natural talking point and keeps the energy upbeat, even during the mid-afternoon lull." Bonus tips for budget picnicking with the kids Freeze juice cartons for ice-cold drinks on the go Bring bubble wands or chalk for easy, mess-free park fun Use reusable plates and napkins to save money and waste Keep meals simple and sharable: pasta salads, wraps, cut fruit, and crisps always go down well Have kids help with the setup - it gives them a sense of pride and keeps them busy
