How the Best Restaurants Can Make You Feel
Restaurateurs are another matter. As the procurers of finances and managers of staff, they're often seen as the hard-nosed businesspeople behind the whimsical auteurs. Yet the best of them are also auteurs, I would argue. They know how to create something special too: They are architects of the inexplicable, know-it-when-you-see-it thing called 'vibe'—the warm sensation of being treated like a VIP, the collective energy of a roomful of loyal patrons, lighting that makes you think your date looks more attractive than ever. These joys don't translate well to television or social media, and even if they did, there's no guarantee the viewers would experience the same thing should they go on their own. The restaurateur is the director of a live theater performance—intimate, fleeting, and different every night. After you try a new restaurant, people typically ask, 'How was the food?' I like to ask: 'How did it make you feel?'
In New York, Keith McNally is the exception to the rule of restaurateur obscurity. Few people have been as recognized for their understanding of atmosphere as McNally, who chronicles his life and work in a new memoir, I Regret Almost Everything. For the cost of dining at his restaurants ($31 for salade Niçoise at Pastis, $29 for eggs Benedict at Balthazar), one could easily find much better food in the city. But to the question of whether they make you feel good, the answer is usually yes. On occasion, during the heyday of his restaurants, from the 1980s to the early 2000s, the most yes.
McNally's vibes have been so irresistible to diners that, for better or for worse, they've reshaped where the city's heart beats, helping turn sleepy neighborhoods into crucibles of spiraling rents. Pastis appeared on Sex and the City multiple times as a stand-in for all that's thrilling about a night out in Manhattan; Carrie Bradshaw once referred to it as 'the only restaurant that seemed to exist.' But the real trick of the McNally experience is its accessibility. Bathed in lighting that critics have called 'McNally Gold' or a 'fairytale glow,' you might feel as though your meal is already a wonderful memory. His restaurants are where Jude Law can brighten your breakfast meeting and Rihanna might enhance your date night, but because they typically have ample tables and walk-in bar seating, they are also readily available to you, the totally-normal-yet-especially-beautiful-tonight you. If anybody can make the case for the restaurateur as an artist, it's the creator of this particular vibe.

Although McNally is a downright legend in New York, he is not a national household name. These days, he might be more broadly known for his deliberately provocative Instagram, where he's gone viral for defenses of Woody Allen and jabs at James Corden. (He mentions these incidents in the book too, admitting that he exaggerated his Corden outrage.)
His restaurant work, meanwhile, is part of a dining-out culture that doesn't get as much adulation as it once did. Following the coronavirus pandemic, fewer Americans want to eat outside their home. Since I started covering the restaurant industry nearly a decade ago, more people seem to be opting for fast-casual chains, takeout, delivery. Some critics argue that, because of this, the people who do still go to restaurants care more about ambience than ever, and that establishments are responding by making it a priority. I think this is true! Still, I can't help but sense a hint of derision in the way this development is discussed. Such efforts to find a distinguishing aesthetic are analyzed as 'branding' or good business sense rather than craft; the adjective sceney is rarely deployed as a compliment.
In his memoir, McNally doesn't explicitly say that he considers his work to be an artistic endeavor, and when critics have compared him in the past to a director, he's scoffed. (McNally, who had dreamed of being a filmmaker and did eventually make two movies, complained that when these projects debuted, 'no movie reviewer ever compared them to restaurant dining rooms.') But a lot has happened to him over the years: In 2016, McNally had a stroke that greatly impaired his speech and challenged his sense of self. He attempted suicide, and got divorced for a second time. All of his restaurants closed in the early days of COVID, and eventually, a couple of them shut down forever.
Reflecting on his near-death experience and its fallout seems to have shifted something in him. With the same self-deprecating voice he uses on Instagram, McNally's memoir offers up the backstory on his style, and in doing so, it embraces his status as one of New York's most influential creative minds. The book is filled with tales of the playwrights and writers and filmmakers who have inspired him, his obsessiveness in the pursuit of aesthetic perfection, and his perspective on restaurant service. It paints a portrait of the artist as a restaurateur, and shows how a singular point of view can translate to the world of dining.
His restaurants, for instance, are frequently decorated with objects described as 'distressed.' The credit for this flourish, arguably responsible for decades of faux-antique decor and color-washed walls proliferating through American dining districts, goes in part to the British theater director Jonathan Miller, whom McNally met through the playwright Alan Bennett. Miller found everyday objects in junk shops and then displayed them in his home as if they were sculptures. Bennett was even more significant to the McNally aesthetic. The two of them dated—one of two gay relationships the restaurateur says he has had in his life—when the playwright was 35 and McNally was 18. Bennett introduced him to plays, books, paintings, and the art of home renovation. Once, Bennett stripped his own sitting room of decades of wallpaper and then applied wax and paint to plaster 'until it turned an extraordinary deep mustard color,' McNally writes: 'the same color I've been trying—mostly unsuccessfully—to reproduce on my restaurants' walls for almost fifty years.'

McNally's flair for heightening the ordinary pairs well with his canny ability to stage restaurants that are posh enough for celebrities yet homey enough for tourists. This insistence on approachability stems, he explains in the memoir, from his working-class background. He writes that he demands sensitivity from his servers when it comes to price: Always mention the cost of specials; never assume that you can keep the change from a customer paying cash. As for his background in lighting, McNally describes a succession of jobs he held earlier: running lights for a live production of The Rocky Horror Picture Show, managing a strip club, working as a manager at the once-legendary restaurant One Fifth. 'Of course, seductive lighting doesn't compensate for tasteless food or inept service,' he writes. 'Likewise, extraordinary food, design and service never guarantee a successful restaurant. Nothing does except that strange indefinable: the right feel.' These are not the tips and tricks of a corporate honcho's management book or the gauzy reminisces of a self-help sage; they are the experiences and deliberate choices that culminated in a fruitful creative career.
McNally is neither the only vibe master in the restaurant business nor the last. Plenty of newer restaurants treat dining out as not just a vehicle for sating hunger but also a source of moments to remember. The see-and-be-seen prime of Balthazar and Minetta Tavern is over; these sleek establishments continue to fill up, but the hottest of the hot young things have largely moved on to other parties. Like a buzzy play that ends up with a long Broadway run, his restaurants stay busy and still promise delights, but many dining devotees remember to revisit only when a cousin comes into town.

The restaurateur recognizes the ephemeral nature of his line of work, though he mostly nods to it while discussing other artists. He notes that Miller, the theater director, enjoyed much more fame than Bennett did for several decades but that Bennett's published work is far better known today. 'After a director dies, his or her specific staging can never be seen live again,' McNally writes. 'After a writer dies, his or her books can be reread and plays restaged.' Nevertheless, he seems, after a period of serious crisis, to have made peace with his own impermanence: 'Who's to say that even if I did possess the talent to write plays that I'd be able to affect—even in the most superficial way—as many people as my restaurants appear to have done for nearly half a century?'
McNally is still breathing, as are his spots in New York, London, and Washington, D.C., some of which are run with the savvy Philadelphia restaurateur Stephen Starr. And his memoir, like Bennett's scripts, will outlast a single evening out. A perfectly orchestrated meal creates the illusion of effortlessness; McNally's book serves as an enduring reminder of the work and talent that go into creating such memories, and of the artists whose vision sets the scene.

Alex Warren's 'Ordinary' turns pain into pop power
California-born singer-songwriter Alex Warren, 24, has struck a chord with hits like his No. 1 single "Ordinary," driven by his deep connection to the raw edges of human emotion. At 9 years old, Warren lost his father to kidney cancer, a tragedy that marked the beginning of a turbulent adolescence. Bullied in high school, he was forced to navigate life on his own after being kicked out by his mother, who struggled with alcoholism, at 17. She died in 2021, closing a chapter of profound personal loss. Warren's 21-track album, "You'll Be Alright Kid," released in July, reflects his journey to overcome the challenges of a kid who had been "badly bullied" and was "just trying to be liked." Last year, Warren married Kouvr Annon, a fellow alum of the Hype House, a now-defunct Los Angeles-based social media collective that helped launch both their careers. He met her on Snapchat when he was 18, homeless and living in his car. Now, they live in Nashville's suburbs. "I've spent most of my life trying to figure out why life wasn't good to me," Warren says. "So I love giving people new ways to feel and think about themselves and their lives. "My struggles made me who I am today," he continues. "The trajectory of my arrival at who I am, who I know and what I'm going to be allows me to write songs that feel like they're meant to teach others how to endure their lives." Alex Warren's 'Ordinary' hit and rise to fame Though Warren is an earnest storyteller, much of his success feels designed for pop consumption. "Because I come from a place where I've achieved success while also being unproven as a musician, I have a lot to prove," Warren says. "The people pleaser in me is so blessed that everyone sees something in me and wants to make sure they don't regret that feeling." After spending three years in the Hype House, Warren appeared in an eight-episode Netflix docudrama filmed at the mansion. His musical style, he says, was forged in the 2010s. His tastes revolved around the intersection of alternative pop, ambient heavy bass, folk and tropical house. In those days, Warren was a depressed teenager sorting through his emotions by learning how to play piano, recrafting songs he learned by ear and writing lyrics that matched their composition, meter and rhyme. "My music works to contextualize emotions that most people don't experience," Warren says. Warren began posting everything from skateboarding content to prank videos to Instagram, TikTok and YouTube. In under five years, he gained over four million followers and became a Hype House cofounder. "Instead of being a musician who's trying to remain ominously mysterious, I'm trying to be who I am and present my real backstory honestly by presenting the emotional place I was in when I wrote these songs," Warren says. The album's production and songwriting team includes Mags Duval, Cal Shapiro and Adam Yaron. Collaborators include country and rock chart-topper Jelly Roll (for the folksy "Bloodline"), K-pop favorite and Blackpink member Rosé ("On My Mind") and Jonas Brothers member Joe Jonas ("Burning Down"). "Music that authentically reflects people's feelings about coming to terms with struggling to try to get better and move forward is breaking through on both radio and TikTok right now," Warren says. Warren on his wife inspiring 'Ordinary' and 'Carry You Home' Written in December 2024 and released two months later, "Ordinary" captures Warren's five-year growth and celebrates the joy he's found in marriage. "It's a special song that I couldn't sit on because it reminds people of an emotion they can't quite put their finger on, because it's one they've had, forgotten, then thought they could never experience themselves," he says. "Carry You Home," released last year, works alongside "Ordinary," he says, and was on the soundtrack at his June 2024 wedding. "The song is a love anthem that depicts how we'll find each other, and I'll carry her home in every lifetime that we'll live," Warren says. "It took me two years to re-channel my inspirations from the grief I've felt over losing my parents to falling in love. Now the songs keep coming because I'm authentically talking about how I've become who I am because of what I've found because of who I'm with." Whether Warren's sound will veer toward country like so many acts before him remains to be seen. Though he says he was "never a country music guy growing up," he says country music works with his art because the genre is built on songs that, like his, are "deep, honest, vocal-centric and organically melodic." "I'm one of so many (Billboard No. 1-charting) artists who are in Nashville right now because the town and its music industry are built on the best singers, most talented songwriters and welcoming people," Warren says. "A bottom-tier country artist or the unknown artist I hear at dinner could out-sing me any day of the week."

Inside Estée Laundry's Comeback: Why the Anonymous Beauty Watchdog Is Posting Again
Estée Laundry wants you to slide back into their DMs. The anonymous beauty watchdog account, which historically broke news (such as Sunday Riley's fake review controversy) and receives all of its tips via its followers, returned last month after a two-year hiatus. Now, the secret collective behind the page tells ELLE: 'We want to be an unfiltered voice in the beauty industry that speaks openly and doesn't hold back.' And it's already providing food for thought; its first post upon returning asked, 'Serious question, are there still any exciting beauty brands?' Estée Laundry talked to ELLE over email about why they stopped and restarted the account, their new mission statement, and what they hope will change in the beauty industry. Before coming back, your last post was in 2023. Why did you guys decide to take a pause? When we first started, there wasn't really anyone doing what we were doing in the beauty world, and we didn't have a template to follow. By around 2023, public sentiment around accountability culture was shifting, and we felt we had already said a lot on topics like inclusivity, copying, and sustainability. We weren't sure if an account like ours still made sense. The space had also become a little toxic, so we decided to take a break and come back only if it felt right. The [more recent] shift in the political climate and the broader backlash against what some labeled as 'woke culture,' combined with the closure of several BIPOC brands that gained momentum around 2020, made us feel like our voice might still have a place and an impact. What about the space felt toxic? Sometimes it felt like whatever we did, there was a reaction. If we called something out, people might say we were overreaching or stirring things up. But if we didn't post about an issue, others would wonder why we weren't speaking up. Over time, that kind of pressure made things feel less enjoyable. It took some of the fun and spontaneity out of what we were trying to do. Did you continue to get DMs from your community? Yes, we did keep getting DMs, especially early on, but after a while we think people assumed we weren't coming back. Every now and then, someone would message us asking if we planned to return. Did you feel like there was a bit of a bat signal in your decision to return, meaning that you felt like the beauty community needed you? We're not delusional enough to think the beauty community needs us, but we honestly thought other accounts would keep covering the kinds of things we talked about. It didn't really happen (as far as we know), and that was something that motivated us to come back. How do you feel about the industry now versus 2023? Things have changed a lot, but the core issues remain the same. The beauty boom from the early Instagram days is definitely over. Now, it's all layoffs and cutbacks. Brands were making more of an effort to be inclusive, sustainable, etc. back in 2023, but that tone has shifted along with the broader political mood. Do you consider the mission of the account to be the same? Our overall mission has always been about bringing more transparency to the beauty community. That said, we can admit we went a little too hard on some issues in the past. This time around, we want the tone of our account to feel a bit lighter (and more fun), while still focusing on the things that matter. What issues do you think you went too hard on? We are referring to times when we felt strongly about certain topics, like inclusivity and sustainability, and addressed them quite directly. Our intention was always to encourage better standards, but looking back, being that direct all the time may have made some people feel alienated or defensive, which wasn't what we intended. What does the closure of Ami Colé mean to you? For us, it shows that even when a brand has fantastic products and a loyal community, it's still incredibly difficult to survive as an independent company. This is especially true with growing competition from larger, well-funded players. It also reflects a broader shift in investor priorities. A few years ago, there was strong momentum behind funding inclusive beauty initiatives, but that focus seems to have faded, making it even harder for brands like Ami Colé to get the long-term support they need. Are you still a collective? And is it a collective of the same people or different members? We won't go too deep into the details, but some of our core team from the last time you interviewed us are still around, though some have moved on. Why do you still want to keep yourselves anonymous? We prefer to stay out of the spotlight, which is why we've kept things anonymous. This account is about the beauty industry, not the individuals behind it. What changes do you hope to see in the beauty industry? We'd like to see fewer celebrity brands and fewer new launches in general, unless there's a truly unique and innovative perspective that sets the brand apart from what already exists. It also goes without saying that we want to see ongoing commitment to inclusion, creativity, and sustainability. Do you hope to monetize the account? Yes, we plan to, but we've always been against doing ads and sponsored content because we don't want that to influence the way we speak openly about brands. We're focusing on a weekly newsletter on Patreon for our subscribers. It's called Laundry Service, and we hope to create more Patreon content in the future so we can monetize the account without impacting our values. Neither Substack nor TikTok existed in 2023. Did you have conversations over whether Instagram was still the best forum? We've always relied solely on Instagram for sharing all of our content. We don't think TikTok will work for us given our format, but we can never say never. We have been considering Substack, but decided to use Patreon for our newsletter because we already had a small following there. If more of our followers show interest in our long-form Patreon content, we might consider expanding and having a presence on Substack as well. What is your process like for vetting DMs? We take the vetting process seriously and do our best to verify the messages we receive. Many submissions come from anonymous sources, especially on sensitive topics like racism and bullying, which can make full verification challenging. Whenever possible, we ask for supporting details, but not every story includes documentation. In those cases, we look for consistent patterns across multiple messages before sharing. How do you see yourself compared to a gossip Instagram account like DeuxMoi? They're a massive account with content that's flashier, slicker, and far more produced than anything we're doing. We don't think it makes sense to compare ourselves. We're a relatively small beauty account, with a focused but deeply invested audience. This interview has been edited and condensed for clarity.
